Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. It is an orthodox dry sake, but highly satisfying. Thank you for the treat!

I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.

The second drink at Marukoma was my first "Koshu". It is light and crisp with a pleasant lingering aftertaste. The second sake was "Koshu", which is also from Niigata but has a different flavor from the "Hokusetsu" that we drank for the first sake 🎵.

This Sake is light and not too sweet. There are herbal flavor notes like licorice and mint. The finish is clean with a light mineral aftertaste. I am told this is a limited, seasonal Sake.

Next, we enjoyed a sake-tasting session with "arayakki", a soft, sweet and spicy dish! We started with the "Sakushu Musashi" on the left! It has a classic, chili pepper dry taste. It has a rich umami taste like a mature sake at first, but then it turns crisp and spicy and disappears quickly, making it easy to pair with a meal👍.

At home. Kumamoto sake, Sung Kaoru, purchased on an expedition to Fukuoka. The Sansho I was looking for was sold out, and I managed to find this Kumamoto sake. It has a smooth, refreshing taste with a slight bitterness at the end. It was a dangerous one that was easy to drink. After a long time, I took a walk around Motomachi area in Kobe by bicycle, bought some gyoza (Chinese dumplings), and went home. Since it was Saturday afternoon, Sannomiya and Motomachi were quite crowded, and the city seemed to have regained its vitality.

It's a little bit different from the popular sake...but I think it's a good sake for a meal. I don't like Ginshizuku and Kinshizuku because they are alkaloids... Thanks for the hard-to-find sake 🍶... The other day I walked past the liquor section of a large supermarket and found a familiar name for a sake 😁I found Chitoku, the gateway to Miyazaki Prefecture 🐎 breaking through the impregnable castle gate of Miyazaki Prefecture 🐎. Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. My mother is from Yahiko Village and I used to stay at her parents' house in Yahiko Village when I was a child, so Yahiko is like my second home.

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.
