This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed. If the name of the sake rang a bell, you're right 👍It's an amazing sake that has taken the name of a famous book. Denemon is a sake brewery brewed by just one person. The name comes from Michel Carouge's famous book "The Bachelor's Machine," which is cited as the bible of the master brewer. It is also related to Marcel Duchamp's "The Bride Naked by Her Bachelors, Even (a.k.a. The Big Glass)". When I think about the sake rice "Aizan," I can see the image of this sake being brewed with love while loneliness, loss of humanity, and the desire for barren love cross the mind 🧐. Today we are going to start with our special bird ❤️ no doubt👍and our favorite gateau rusk🥰Carouge & Duchamp, so it's like a French 🇫🇷... ❤️ By the way, this "bachelor" is not sweet at all 🤘 it is rather tangy and spicy, and has a sharp taste, leaving a bitterness that is typical of Aizan. But it is not too alcoholic, and is indeed easy to drink 🧐. When paired with the rusk with pomegranate on top, the sweet and savory flavors are gradually felt. It arrived just a few minutes ago. This morning, the sake was pressed early in the morning. It seems I forgot to buy it last year, but this year I reserved it and bought it. I couldn't stand it, so I had a cup in my inoguchi. I love Tomikunishiki, but this year's Risshun morning pressing has a little acidity, a clean throat, and not much of an aftertaste. It's delicious!

This is a sake that the young brewer of Kanbokuto Shuzo challenged to make Junmai Ginjo sake with Gin no Sato and No.7 yeast. It is said to be a limited edition. I often visit the Kanbokuto Sake Brewery and have this sake as my personal favorite sake, but compared to the other sake on sale, the taste is so different that you would think it is from a different brewery.

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. Kubota Kenshin Junmai Daiginjo 2021BY✨ I'm opening a bottle to feel a traditional sake for the first time in a while: ☺️ The rice used is 100% Takananishiki, and the polishing ratio is higher than that of Manju, which is a high-end line. The aroma is of the light, dry Niigata sake of yesteryear, but with a hint of matured sweet grain 😊The taste is a perfect complement to Japanese food as a mid-meal sake, with a sharp aftertaste, but with a soft, full-bodied rice sweetness that is delicious in its own right 🤤.
