This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It was a gift from a junior colleague at work. I received it last year and remember that it had quite a punchy 🤜 flavor. It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. It's only 3 days old and it's getting sweeter and tastier 🙌 I got it in a bottle, so I'm thinking of trying some heated sake with ✖️ on the back label 🧐.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

At home. Hatsutanaka Rokuugo. A famous sake, but I didn't know much about it... Yamada-Nishiki, it's a tanaka in the middle of a rice field. I knew it for the first time. The aroma is fruity (Muscat type?). Good balance of sweetness, umami, acidity, and bitterness. It is a quintessential gem, suitable to be enjoyed in a relaxed and leisurely manner.

Junmai-shu, 65% polished rice, brewed by Mr. Tanaka in a sake brewery located in the rice paddies. Tanaka Rokuugo. I knew it was delicious from everyone's postings on Sake no Wa 😊. I thought it would be more of a gusto, but it was a delicious sake with a gentle rice flavor and a light texture♪ Kyushu has an image of shochu, but I was surprised at the high level of sake as well, including Tanaka Rokuugo, Koei Kiku, and Sundo 😆. I'm looking forward to trying some of the other sake I have in stock 😁.

It arrived just a few minutes ago. This morning, the sake was pressed early in the morning. It seems I forgot to buy it last year, but this year I reserved it and bought it. I couldn't stand it, so I had a cup in my inoguchi. I love Tomikunishiki, but this year's Risshun morning pressing has a little acidity, a clean throat, and not much of an aftertaste. It's delicious!

I went to the Tomikunishiki New Sake Festival yesterday and today. I bought a bottle of Shiboritate and sake lees this year too. I opened the bottle right away. This year's Shiboritate seems to be more fruity than usual. It's delicious. I love Tomihunishiki after all❤️.

This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" that I posted a while ago. Mandai must be more famous locally 🤔. It will be a Risshun morning pressing 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

At Ya-Ya in Kobe. This is the first time to drink Neko Masamune since it was transferred from the defunct Omi Sake Brewery to Maihime🐱. I thought it might be limited to direct sales, but I was able to buy it at a liquor store. If you go down the shopping street near Okamachi Station, you will find an old shopping center with a supermarket in it. This is a community-based liquor store that is housed in it. They carry a wide variety of sake brands such as Yukitsuru, Asakayousei, Katanozakura, Kaygetsu, Sakura Masamune, Ootsuru, Shiraoi, Haginoduro, Shikizakura, and others. They seemed to be putting a lot of effort into craft beer and wine. The rice is Gohyakumangoku and Koshibuki. The rice is lightly cloudy to the point of being orikara. Basically, it is spicy, but the entrance is clean, and it tastes good with a firm umami and acidity in the latter half.

Purchased at Takatsuki Hankyu. To be honest, they have a smaller selection of alcoholic beverages than Umeda Hankyu, but I think their lineup is more tasteful than Umeda. Umeda relies more on on-site sales. You can also buy Kuninonaga and Kiyotsuru at Takatsuki Hankyu. Grape and banana-like atmosphere. Not too sweet and spicy, but clear and beautiful. I wrote "clear," but considering it as a dry wine, I wonder if it is a mellow dry type. I said it was spicy, but there is a moderate amount of sweetness. This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... Echigo Den-emon Toyosaka The nose has a strong grape-like aroma. When poured into a glass, it gives off a fizzy sensation. When you take a sip, you are first surprised by the very strong acidity. It is not often that such a strong acidity comes out on the whole surface of a sake. After a delay, a moderate sweetness arrives, and the palate is filled with a lingering bitter astringency. The impression is light, fresh and dry. Overall, it is well-balanced and never gets old. The Mishaguchi I drank once before was full of sweetness and punchiness, and I thought it was a brewery that specialized in making such sake, but this time, the impression of acidity was strong anyway. It seemed that Mishaguchi is not a one-size-fits-all brewery, and I was eager to try their other sake as well. The sake is brewed in very small quantities by a single person, and as the label indicates, one can sense the tremendous care that goes into making it. The price is a little high, but that is acceptable if the sake is this unique. In these days when it seems that there are many sake with a somewhat similar taste, this is a bottle that makes you happy with its unique impact.
