There are not many sakes that have changed in taste like this.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

I went to buy the pre-sake I wanted, and since that was the only sake I was sorry to buy, I bought Saitama sake, which I rarely have a chance to drink. When I was trying to decide which one to buy, the owner laughed at me at the cash register, wondering why I was looking at the back label so much. I told him I don't like anything too spicy, and we chatted for a bit. I had it cold. When we poured it into the glass, there were quite fine microbubbles adhering to it. Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.
