The last sake I purchased on my GW Niigata trip. I opened Hishiko. As stated on the label, it had a mellow sweet sake quality that brought out the aroma of the yeast, the umami of the rice, and a beautiful sweetness. It has a clean aftertaste, making it an excellent choice as a mealtime sake. I would like to try it again on my wonderful trip to Niigata.

Kansai Salmon Ware year-end party⑳⑳ We said goodbye to Umaisan, Maru, Rutemi, pyonpyo and Robin and went to the 3rd party. Mr. Muchi helped us to find a restaurant for the after-party too. I remember it was pretty fruity and refreshing. We also drank Niiyu's dry sake and Toyo Bijin's straight kumi, which is not on the menu 😋. I always listen to kan's 🐴 stories: 👂️ Mother and father are important 🐎. Jive-san had to leave on the way because his train time came 🙋. Finally, Nemuchi and I had ramen at Ramen Nigamushi Chicken before heading home 😋. I've never had ramen before and it was delicious 🍜. Aochan who went missing also went to another ramen restaurant 😁. I lost the sake that Jive gave me, so I went back to the after-party later, but it's a secret 🤫. The other day, my dad and I went to my parents' house for a long time. We started with beer 🍺, then I brought the rest of the "True White" that I had opened the other day, and my dad brought out some sake that had been laying around for a while, so we had a drink here 🍶. Kansai Junmai Sake. I often drink "Kansai Kaisen" hot, but this is my first time to drink Junmai Sake 🤔. Clean and beautiful rice aroma, rounded flavor and refreshingly pleasant aftertaste, probably due to the cellaring. The taste is different from Katayama's other brand "Gassa Junmai Ginjo", but it's hard to tell how much of it is due to the aging process 💦. However, I have a feeling it would make a beautiful hot sake when heated. By the way, when I gave "True White" to my father, he said it was too sweet, but when my mother drank it, she said it was delicious 😁. The fourth picture is from a trip to Atsuta Jingu Shrine in Nagoya, where I lived for two years after graduating from high school, to purify my car and eat Hitsumabushi. ［It was my first time to eat at "Unagi Owada" because "Atsuta Horaiken" was closed, but the sauce was much lighter than this one.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!
