Purchased at Sake-no-Oyama in Joetsu City in July. I rescued a spring sake that was left behind in the summer. I don't usually drink this brewery, but I picked it up because it is made from 100% Koshitanrei sake produced in Kakizaki. Pouring it into a glass, I noticed that it was slightly colored. The top rise is gentle, but the aroma is of rich rice. Perhaps it is because it was bottled in February, but it seems to have become richer than the original flavor with the passage of time, though not as much as the matured aroma. When you drink it, it has a robust Koshitanrei flavor! There is almost no sweetness, and you can feel the rice straight away. The passage of time also gives the impression that the umami has increased. The alcohol-derived acidity tightens the overall flavor. Since it is unfiltered, it is fresh and easy to drink. When asked what the umami of rice tastes like, this sake is the first to answer. I would like to be the first to offer this sake when asked what the umami of rice tastes like. It is not just sweet and tasty, but tasty and delicious. I have found the next best Koshitanrei sake after Yukihonbai and Kaminari. Koshitanrei is the best!

I have a new impression of Ehime sake 😁. I had never had much Ehime sake before, but I had an image of it being somewhat mellow and dry. This sake is completely different, it is light and slightly acidic, and together with the bitterness in the aftertaste, it is somehow like grapefruit 😊. It also has a bit of a fizzy feel and is very easy to drink as there is no unpleasant spiciness that lingers in the throat 😋. If it were a little more sour, I think I would find it too sour for me, but this level of sourness is just right 😄. I'm only one bottle away from the nationwide domination of the four-gouple bottles or more limited edition. The last one is in Osaka, when can I achieve it? 😅

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. Purchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers.
