Aizu Shikon Junmai Ginjo White Koji Brewing
I bought a bottle of Aizu Shikon as a souvenir from my parents' home in Aizuwakamatsu.
It is bitter and sharp, with a hint of gas, sweetness, and apple flavor.
I feel the assertion of bitter rather than sweet and sour from white malted rice.

At Taki no Yu Shosuke no Yado. A special brand. Low temperature storage, unfiltered and unpasteurized. Melon type aroma. Aroma, clean, acidity, bitterness, and elegant taste.
Sake made from Fukushima Prefecture's sake rice called Fukunokou 🍶.
I thought it would have a strong taste from the logo on the label, but it was surprisingly sweet and delicious 💡.
It was very easy to drink as a food sake. 👍️
It is a pleasant sake with a slight gasiness, a fresh aroma, and a wonderful sharpness from the dry acidity.
Serve with ground tea buns (Saiki's famous confectionery) as a side dish.

I was thrilled to discover a cozy sake store in a residential area that looked like a renovated warehouse 🚙 and entered the store to meet my first sake.
The soft aroma that reminds me of apples, the full-bodied sweetness like cotton candy, and the slight rice flavor...it's delicious enough to be enjoyed on its own 😋.

This is a brewer🔥sake with a soul! I thought it was going to be spicy, but it was sweet and delicious 😋 I'm looking forward to see how the taste will change in the future. I wonder if I can remember this taste😅.
