Sake from my hometown in Saitama (Sai-no-kuni yori katari shiranai reishu) has become a major sake...sweet aroma, gorgeous and fruity...sweet on the palate! Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!

Purchased at the new "Haneda Airport Garden" at Haneda Airport, an antenna store for the Yamakoshi area in Nagaoka City, Niigata Prefecture. Tokaido Sake Brewery Tour in Spring (3) The last one is Masterpiecea by Laughing Four Seasons. Masterpiece is a sake with the theme of technical study and a retrospective and return to classic ginjo, I tasted it at last year's sake brewery tour and enjoyed it so much that I left without buying it, which I regretted a lot 💧. This year, I was determined to bring it back! This year, I decided to bring it back! Masterpiece has A (Yamadanishiki) and Un (Watabune), and I decided to bring back A this time. I decided to bring A back this time. The color is slightly greenish. The nose has aromas of white peach, pear, melon, muscat-like fruit, lily-like white flowers, bay leaves, and white dumplings. The moment you take a sip, you will be surprised by the smooth, flowing, luscious taste. Shishimai Fuunroku Part 3 The next point of rest and ga-in is Tenjo Yumegen This label commemorates the 100th anniversary of Maruka Kensetsu, located in the same area as Nakayu Sake Brewery. The contents are probably the same as the regular Tokujun, but it is only at local festivals that this kind of sake is served as a sacred sake. However, I am not sure if this label is "Yamato" or "Taiwa". It has been a long time since I have tasted Tenjo Mugen, and while it has a dry base, it is slightly sweet, has a strong umami flavor, and has a nice acidity and bitterness.
