Arikato Junmai Daiginjo
This is a limited edition sake from the Fuji Shuzo brewery of our favorite Eiko-Fuji.
It doesn't have the gassiness of Eiko-Fuji, so the sweetness stands out a bit, but it's still juicy and gorgeous.

Aroma: The gorgeousness typical of Junmai Daiginjyo and the freshness of the raw ingredients can be felt as indicated on the label.
Taste: When chilled, it is raw in a bad way. The gorgeousness of the daiginjo is lost. After a while, when it warms up a little, the sweetness becomes extremely strong. It is interesting to note that the taste changes drastically with the change in temperature.
Overall Comment It is a matter of taste, but I feel that the goodness of raw sake is lost when it is a Daiginjo class.
I chose this one based solely on the likability of sounding like "thank you". The brewer, the Kato family, has had "Ari" in their name for generations, so the name is "Ari-Kato.
Furthermore, the Kato family is also related to Kiyomasa Kato, a warlord of the Warring States period. I had always thought of Kiyomasa as being associated with Kumamoto Castle, but this was the first time I learned that he was also associated with Yamagata and Tsuruoka.
