◉Doukan Tokubetsu Junmai Nama Hashiwazukuri
The standard flavor is here. The sake has a clean acidity and umami flavor.
This is the first sake made this year using the kamishige method. The rice was hard to come by, so Miyamanishiki from Nagano Prefecture was used.
◉Doukan Tokubetsu Junmai Jusui Shizukomi Nama-nazake
Clear, rich sweetness and concentrated flavor. It is quite my favorite and extremely tasty.
This is the second year of production, and the first was a popular product that sold out immediately. The brewer who took care of it was in a hurry to get it back to the head office because it was sold out. I wish I could have bought it.

The sake is very umami, authentic, and delicious. The harmony of umami and sharpness.
The production is said to be higher than that of the Chiyoda brewery.
As expected from a certain izakaya, there were many delicious sakes.
bouken, Hi 😃Chiyoda Kura is sold only to sake dealers and distributors and the production is small 🤔Doukan seems to have a better sales channel, but you don't see many of them even in Kansai 😅.

It tastes sweeter and spicier than the Junmai I drank the other day. The ginjo aroma is not so strong. The Junmai was easier to drink and I might have liked it better. I hope to drink it next time.

I don't have that much favorite sake from Shiga Prefecture, but I thought this one was delicious!
It's dry and lingers in the throat at the end, but the aroma and mouthfeel are sweet. It has a thick, thick flavor that is typical of nama sake.
The difference between the mouthfeel and throatfeel is very interesting. It is sweet, but it is also thick and dry! It is very interesting.
#Drinking at home
The umami, acidity, rough texture, and slight effervescence are typical of unfiltered Doukan, but the astringency at the end is moderate, so it is more suitable for people who drink it than other Doukan.
The alcohol content is 15%, so you may not think it is a pure sake unless you are told so.
It has a well-balanced umami taste, while still having some of the characteristics of the original.
It is a season that tends to be dominated by summer sakes, but sometimes a sake like this can make you appreciate the taste of summer sakes again.
The brand name reads "Dokan" and is made at the "Fuji" brewery.
Jumizu-shikkomi is a late Edo period method of making sake with less water than usual.
It has an aroma of apples and refreshing bananas. Sip a little and you will be hit with a thick, thick sweetness, a rich acidity that pushes up the sweetness, and a gradually resonating umami that leaves a moist aftertaste.
I found a good sake.
First time drinking local sake. This sake brewery was started in Kusatsu-juku by a descendant of Ota Doukan. It is said that the brewery is involved in a wide range of activities, including making sake and wine exclusively for the Imperial Palace and the Kyoto Imperial Gardens. I had no idea.
The main taste is similar to Ganki, with a clean, slightly sweet and sour taste. I didn't know there was a sake I liked so close by. ❤️ I'll go to buy some next time I'm back home.
PS: I think the bitterness that lingers in the mouth increases as time goes by. It may be due to the temperature change.
#Drinking at home
The gentle Miyamanishiki taste can be felt, but the acidity is impressive, perhaps because it is a sake made from a sake brewer's yeast.
The astringency and bitterness that comes toward the latter half of the bottle is the same as that of the first sake released from the warehouse and Watabune.
It is a stable taste of Doukan.
