For a junmai daiginjo, the aroma is subdued, and the umami and richness of the rice can be felt, giving the sake a solid impression. It goes well with meals and is also delicious on its own. Last night was a New Year's party with a couple I met last year. We had dinner at a nice restaurant and then went to Kokubuncho. After the fourth bar, I finally had a chance to drink sake. I have known the owner of this sake bar on the outskirts of the city for about 25 years now. The lighting doesn't look like it's the kind of place you'd enjoy sake, but don't worry about that. The selection is quite good, so go for something you've never tried before. First up is Hiryu, the one with Tatsumi Fujinami's red towel. A dry sake with a refreshing yet tasty flavor, just like Mr. Shinzawa! Thank you very much for your hospitality!
