Whale wave is next. I thought it was your first time in Gifu Prefecture and you got one 😊. The aroma is fresh and fruity by nature, with a slight hint of hineyness, perhaps because the bottle was opened 3 months later. Well-balanced fruity. Almost no acidity. A full-bodied flavor softly appears at the end of the bottle. Although it is a draft sake, it is quite soft and mild. Maybe soft water? 🤔 It is best served cold or chilled. Drinking with my wife at Tsushima Tsuru at Metropolitan Morioka New Wing on our wedding anniversary last week (laughs). We continued with Kikunotsuka Junmai-shu (Junmai-shu is a junmai-shu made by Kikunotsuka). Kikunotsuka Yo is a summer sake in the same series. This one is a matured autumn-aged sake. It is sweet but refreshing. No sticky feeling at all. The mild taste goes well with Rishiri kelp and ebi majake. I have to get up early again tomorrow, so that's all for today. Good night. (-_-)zzz

I was curious about this sake when I saw it on Sake no Wa before. It was given to me as a present by chance. It has a spreading umami and a bitter finish. It was a delicious sake. The "Recommended for you" list has become full of Hokkaido sake 😀.

The first bottle I opened this year was Suzukagawa from the same brewery as Saku, which I got at the end of the year. The aroma, sweetness, acidity, and bitterness in the mouth are very similar. It wasn't as impressive as the Saku, but it was a delicious gem. At the end of the year, I mainly drank the same brands, but now that the year has started, I would like to try more and more new ones that I have never tasted before. This Suzukagawa is the first step, and I hope it will be a good start. I would like to continue my efforts to develop new sake.

Freshly brewed with Miyamanishiki from Nagano Prefecture. I'm not sure what to make of it, but I'm sure it'll be good. The color is milky white. The smell is mild, with a hint of flowers. The taste is fruity, but not too sweet. It has a nice umami taste with a slight sourness and bitterness in the aftertaste. You can feel the alcohol quite a bit, it's 17 degrees, so it's thick. It is easy to drink on the rocks with ice. I think it tastes better if you drink it this way. It has a refreshing, dry, gassy flavor that pairs well with 🍖 meat dishes and Chinese and other oily dishes 😋~.
