Summer sake from Kimasa. The sculpin on the label is adorable. I asked my wife to run an errand for me and bought a bottle. I was happy, but still happy.

The aroma is sweet and vanilla-like. Acid, acid, dryness, sweetness for a moment, and then bitterness...hmmm, this is delicious. This is delicious.

My favorite Junmai Ginjo Yamadanishiki from Kimasa. There was a tasting and sale at Aji-no-Machidaya, and I was given an oinokuchi (small sake cup) with my purchase. Akikawa's sculpin is cute. The aroma has a tangy alcohol flavor. The flavor is well balanced and the umami is robust, making it enjoyable as a stand-alone sake or as a food sake. The slightly ugly sculpin is also charming.

In early autumn, I went to Akiruno City in Tokyo to feel nature. It was still a little chilly when the sun went down at that time.
I had lunch at a soba noodle restaurant called Koharuhiwa (delicious!). When I casually asked about a sake with an unfamiliar name on the menu, I was told that it was the best sake in Tokyo. He told me that he thought it was the best sake in Tokyo. I wonder what it tastes like.
The aroma was a little alcoholic with a hint of ginjo. When I drank it, the taste was quite unexpected. I was expecting something classical, but there was a juicy fruitiness. I can't narrow it down to a single fruit, but it is an easy-drinking sake with multiple fruit aromas mixed in tastefully.
The sweetness is moderately restrained and the volume is not that much along with it, but there is a moderate bitterness at the end that gives it a good three-dimensionality.
It was a high-level sake that combined a refreshing, pop taste with a solid umami flavor. Even people who do not usually drink sake said it was delicious, so if you stop by the brewery, please give it a try. I think it is best to chill it well and drink it up in about 3 days. It was very impressive!

Junmai Nama-zake from Kimasa. It has an upfront aroma of alcohol and melon. The hint of alcohol softens somewhat. It has a light mouthfeel with a hint of cucumber sweetness, but the bitterness and astringency spread strongly. It is a relatively fruity sake among the Kimasa brands.
