Totsuka Shuzo, Saku City, Nagano Prefecture: Kantake, Haruyo koi Special Junmai This is a little out of season, but I opened a bottle I had purchased on a trip to Nagano Prefecture in the spring and kept in my refrigerator. As the name suggests, it was a very refreshing and spring-like sake with a strong acidity.

KANCHIKU Special Junmai (Nagano, Chikumanishiki Shuzo) Purchased at the souvenir corner at Sakuhira Station. The aroma has a sweet nuance of rice malt with a hint of alcohol. The mouthfeel is soft and mild, with umami and spiciness in the middle part of the mouth, but there is a little bit of a cloying taste. The aftertaste is dry and heavy. Slightly lean sweetness and flavor. There is also acidity, but it is not strong. Strong alcohol taste. The sweetness is more pronounced when heated. I would prefer it warmed up.
