Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. It has a relaxing and soothing taste. When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better. The warmth of the clay makes it even softer and happier 💕. This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. But it also has a strong umami of rice and is easy to drink without any peculiarities 😆 It is easy to pair with meals and I was off in no time 🤣. It was easy to match with meals and we finished it in no time 🤣.

This is Asahi Kiku Arahashiri, a Fukuoka souvenir 🍶. It's in a nice looking bottle, but it seems that during the new sake season, Fukuoka's sake is often served in these stoppered bottles. I thought it was nice because it can be corked tightly so it is easy to reuse. The initial aroma is slightly sweet, like cooked rice. In the mouth, it has a mild sweet flavor with a slight astringency. It finishes with a slight bitterness. The astringency was a bit strong, but the sake was delicious with a calm and full flavor typical of Asahi Kiku ✨.

I bought it by weight the day after the Hankai Train Off-line Meeting. I took this opportunity to buy it because Miyakotsuru's draft sake is rarely distributed. This is an annex of a store in Fushimi that sells all of Fushimi's sake in Nihonbashi, Osaka. I wonder if the sake brewers' association is involved? The bottles come in various sizes and labels, and you buy the bottle you want and pour it. You pour the sake yourself, but since I was right on the 300 ml mark, I received a sake cup as a "Pitari" prize. The taste is melon-like with a clean mouthfeel. The long, thin and extended acidity is impressive. It is a little light and has a sweet and spicy flavor. After about a week, the flavor seems to have opened up, or rather, the flavor profile has become more defined.

I don't have an image of Shizuoka sake as a modern sake, but I wonder if there is any 😅. Well, I took it out of the fridge and drank it cold 😃. Yes, it's refreshingly dry but surprisingly soft on the palate and easy to drink 😗. I thought this would definitely taste better lukewarm 🍶, so I warmed it up and the mouthfeel became softer and softer 🍶❣️ It is not a sake that has any special characteristics, but the price is reasonable, so it is worth buying 🤭.
