Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands. This was over 2,000 yen at a certain izakaya in Osaka, but at a nearby liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description. Have you all entered GW? I am starting tomorrow. Well, the father of the liquor store recommended this Yuto. It is a spring sake, but the label is not pink or something spring-like, but for some reason, it has a full moon. My own guess is that it comes from the haiku term "Haru-Manzuki," which means "full moon in spring. But it still looks like a hiyaoroshi. Lactic acidity from the top-tasting aroma. The mouthfeel is silky and light sweetness from the tangy gasiness, and the umami is jiggly. The aftertaste is full of lactic acidity, and the closing acidity and bitterness are robust. I thought it was a bit of a rush at the back of my throat, but it was only 17%. It is light, so you don't feel it too much, but it is quite heavy. If you don't think about the order in which you drink it, it might wipe out the taste of the next sake. Thank you very much for the drink!

KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

I also bought this at Yamaya. The aroma is like a pineapple. It has a mild sweetness and a juicy flavor. This is one of my personal favorites from DHC Sake Brewery. It's been a while since I drank their sake, but it's still delicious. There is a big change in the taste after opening. The pungent taste became more prominent. The pineapple aroma also disappeared. The gradation of the bottle is beautiful.
