I had not had the pleasure of visiting Sado last year, but I found this at a liquor store in town when I wandered by. I was hooked by the power word "centrifugal separation" and decided to take it home immediately. This is a good sake. It is very soft and elegant on the palate. The rice is made from Gohyakumangoku with a 55% milling ratio, but it is beautiful, with the sweetness and flavor of the rice riding on the transparency of the 35% milling ratio. The aroma is banana-like. The taste is full of sweetness, but the gradual entry of acidity is clear and the balance of sweet and sour is pleasant.

Last sake I bought last year as a Kumamoto souvenir. If I have a chance to visit Kumamoto again, I would like to visit Aso and Kikuchi area 😌. I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.
