Next was a sake I'd never seen before, so here it is. As soon as you take a sip, a very unique habit spreads! What is this? What a shocking taste! Looking at the label carefully, I found a hint of plum flavor? If it's the astringent bitter taste of plum, I'm convinced: 🙂‍↕️ I don't think I'll ever drink it again😅.

The first drink of the day. I drank it cold. It is fruity and has a sake-like taste. It is relatively light and easy to drink. I read in another post that it has a plum aroma when heated, so I thought I'd like to try it.

First check-in in Ehime. Hakutsuru-nishiki is new to me. The overall flavor is gentle and a little sweet. It is perfect for winter. My first daughter was born today.

It has a western Japan-like, umami flavor. It leaves a slight aftertaste. I drank it at room temperature, but it will have a different taste if it is chilled.

Purchased in Nerima Ward, Tokyo ♪ Alcohol content@15 to 16 degrees Sake degree@+2.5 Acidity @ 1.8 Rice used@Omachi Polishing ratio @ 65 Personal Recommendation @ 3.8/5.0 I was looking for a sake from Ehime that I've never had except Ishizuchi, and I found it at a liquor store that I visit if I stop by nearby that carries a lot of non-selling sake these days❣️. Yamakawaryu😘 from Ume Nishiki Yamakawa Co. It is a sake brewery located in Kanada-cho, Shikokuchuo City, Ehime Prefecture 🤲. I'm not sure if this is the right place for me 🤣. The liquor store had junmai sake and junmai ginjo, both at reasonable prices, but I thought it would be a classic sake, so I chose this junmai sake that can be heated up 😎. The sake brewery's website says it was designed to be the ultimate food sake. The subtle aroma of plum blossoms will make your food taste even better! It says 🤭. Oh no 😂. I don't detect any plum blossom aroma at all😂. Even though it's a new sake made in December 2022🤣. I don't know if it's my stupid nose, but the aroma is classic eye sake aroma. And it's fruity if you drink it cold 🥰. The fact that I wasn't expecting it makes the score sweeter ☺️. Tomorrow I will try it hot and warmed ☺️.

This is not a brand I would choose, but it was recommended to me by a liquor store as an interesting sake to warm up. It is made from 100% Hakutsuru Nishiki, which Hakutsuru developed as a younger brother of Yamadanishiki. Ehime's Umekinishiki Yamakawa was under the umbrella of Hakutsuru. Characteristics of Hakutsuru Nishiki ~ from Hakutsuru website ~. Large grain and large heart white Low in protein and fat, which can cause miscellaneous tastes. It is hard to crack when polishing the rice. The rice is relatively easy to cultivate because it is low in height and does not easily fall over. Comparison with Yamadanishiki It is easy to drink cold, and has no quirks. When heated, it is indeed fuller, but the aftertaste is clean. I'd like to see how it changes after a few days. On the second day, the taste changes deeply. It becomes rounder and more cohesive with each passing day.
