Purchased at a local liquor store for heating. Warmed to lukewarm 43 degrees. The aroma is of sweet rice with a hint of matured acidity. A sip reveals a gentle sweetness that fills the mouth, followed by sourness and a slight bitterness at the end. The sweetness does not linger and has a good sharpness. It is made with Yamadanishiki from Hyogo Prefecture, and the rice is delicious and even elegant. Another delicious heated sake.

I bought this cup of sake when I bought Shinshu the other day. The concept seems to be to serve it with ramen, but I bought some fried chicken because Daiichi Shuzo told me that it also goes well with oily food like Machichuuka. I heard it has acidity, and it certainly does, but it's spicy. The spicier the better. But it is delicious! The fat from the fried food flows off nicely. This is good, I'll buy it again.

Aizu Shuzo's Aizu Ginjo Nama Shu Arabashiri. The initial aroma is just a hint of sweetness, but once you take a sip, a soft sweetness and bitterness spreads. Although it is a ginjo-shu with alcohol, it is smooth and easy to drink, and the alcohol content is a little light at 15 degrees, so it is easy to enjoy and delicious. 😋♪

Shirasasadzumi (photo right) drunk at Odawara Kamaboko Dori Vitalization Council [Autumn Sake Ajiwai Tour - Junmai Sake from all 13 breweries]. Details of the sake are unknown. This store is the birthplace of kamaboko, and the owner (?) is a senior employee of the store. The owner's senior brews Shiro Sasadzumi. The fish paste is excellent. The yellowtail hamburger steak with yuzu flavor is more than fish paste.

Bicchu tasted a sake from Jindai. Sanko Masamune, when I drank the junmai sake before, seemed quite mellow, but the junmai ginjo was just the right density, probably due to the difference in rice polishing ratio. It is also a very tasty sake.

I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

The rice used is Asahi rice produced in Okayama Prefecture. This is a good food sake that can be drunk easily. It has just a hint of sweetness, with a crisp, bitter and spicy finish. There is nothing to hold you back, so you can't help but drink it. This is one of the several bottles I purchased from Doroki Sake Store, including the Koei Kiku, under the guidance of MAJ. I would like to thank you again for the good sake ^_^.
