Junmai Daiginjo is served in first class on airplanes.
Junmai sake is full-bodied and sweet, with a savory flavor that comes later. It is not my favorite in terms of balance, but it is more alive with umami and saltiness than vinegar.
It tastes good plainly! It is fruity with a sweet and slightly sour taste. The mouthfeel is mellow, and the taste is slightly thick from the middle to the end of the mouthfeel, but the taste goes down the throat quite smoothly and crisply.
As one would expect from Niigata, there is no shortage of delicious sake, and it is no wonder it won the JAL Flying SAKE Award at the SAKE COMPETITION 2023. The fact that it was available at Yamaya is also quite impressive. Thank you, thank you, thank you.
This is the Gekkokujo series made by Toji Ijima of Mine-no-Hakubai.
It has a fresh, apple-like taste 🍶.
