Junmai-shu*, a special junmai-shu brewed in the "ikuhashi-zukuri" method, is stored in Yoshinosugi sake barrels and bottled when it is at its most fragrant and ready to drink. It is characterized by a mellow flavor with a lingering umami taste typical of junmai sake and the fresh aroma of Yoshinosugi cedar, as well as a crisp, refreshing throat sensation. Alcohol content 15 Ingredients: Rice, Rice Koji (100% domestic rice) Sake Quality Dry / Slightly light +5.0 The highest quality sake barrels are made from Yoshino cedar. The dry sake brewed in the "barrel bottle" process is packed in a 72-liter barrel and shipped in a bottle when the aroma of Yoshinosugi cedar is just right. Yoshino cedar is used because the Kii Peninsula, where the sake is produced, has a mild and rainy climate, and the cedar has a good aroma and the grain of the wood is uniform, which has long been considered the best quality for sake barrels. Refreshing aroma and a tight, refreshing finish Kiku-Masamune "Barrel Sake" is an authentic dry sake with the aroma of Yoshino cedar. Enjoy the fresh aroma of Yoshinosugi cedar and the crisp, tight taste. It is best served chilled in a refrigerator. It can also be served chilled (at room temperature) if desired. Won the Gold Prize at the 2023 National New Sake Competition (co-sponsored by the National Institute of Sake Research and the Central Association of Sake Brewers of Japan). (This was the 19th time in total.) Fukuju Chotokusen Daiginjyo" is one of the highest-grade daiginjos in the Kobe Shushinkan lineup. It is brewed using the "Tarai-koji method," which is rare in Japan, for koji making, and is a true "work of art" that makes full use of the brewing techniques developed by Kobe Shuishinkan. You can enjoy its gorgeous ginjo aroma and full-bodied flavor that spreads in your mouth.

Second Day of Kobe Shu-shin-kan's Brewery Opening Unfortunately, it rained ☔. Still, the place was crowded with many people. 〜Barrel Sake Kikumasamune's barrel sake had a more pronounced cedar barrel aroma, while Fukuju's had a lighter aroma. I wondered if too strong an aroma from the barrels would kill the sake's aroma and taste. I thought it was added or subtracted. I am the type of person who would like to taste more oaky flavors, so I thought the aroma was not enough for me. I thought it was easy to drink and did not interfere with food. I will definitely buy sakekasu and sakekasu ice cream 😁. Today I also had Sakekasu cookies 🍪! Good texture, good taste 👍May yummy!  Hon Mirin (Japanese sweet cooking rice wine) is great. You can drink it as it is. It was so good, I bought it. I also bought a lot of sake 🈵. It was fun! I plan to conquer all the sake breweries in Nada Gogo for a while on my day off. I'm from Hyogo, so I'm going to start with my hometown first 🏁🍶.

My mother says it tastes like my father's. ‼︎😃 〜Fujii Honke Sake Brewery Tour Tour of the East Brewery, designated as a Tangible Cultural Property of Japan. Mr. Tetsuya Fujii, the 7th generation head of the family, personally guided us around the brewery. He was tall and slender, and when he and my mother, who is petite, stood side by side, the difference in height made me wince. My mother tasting the brewing water. The zelkova building is used as a store and event hall. The first thing you see when visiting the main Fujii house is a massive zelkova building designed by Shizuko Fujii, the sixth generation head of the Fujii family, with a store on the first floor and a spacious hall on the second floor, which is used as a venue for cultural and artistic presentations such as concerts.

Asahi" is made from rice and spring water of Shiga Prefecture. The Fujii family brewery is located in Shiga Prefecture, which is blessed with high-quality spring water suitable for sake brewing. The water is soft and low in iron content, which makes it possible to produce sake with a mild taste. In addition, there are rice paddies around Lake Biwa where high-quality rice suitable for sake brewing is grown. For generations, the Fujii family has insisted on locally grown rice, and "Asahi Sun" uses "Tamasakae" and "Ginfubuki" rice grown by contract farmers in the prefecture using low amounts of pesticides and fertilizers.

I went to the opening of the Kobe Shu-shin-kan brewery. It is a limited edition sake that has been aged for two years. It was sold out in no time. I'm glad I could buy it. ‼︎ Deep taste: .... Smooth texture. Unlike hiyaoroshi, nama-shu, and hara-shu, it is not a refreshing type of sake. It has a deep and rich flavor. Toun on the nose, it doesn't come at all. Good😍Delicious‼︎

A short trip to Shiga Prefecture to celebrate my mother's 77th birthday. We went to Fujii Honke for a tour of the sake brewery. An elderly man with a great love for sake guided us around the brewery. He let us hold a cedar ball, which my mother was very happy to see because it was much heavier than she had expected. We were also allowed to drink the brewing water and taste various kinds of sake, but when I took a sip of this sake, I felt a strong sensation in my nose! When I took a sip of this sake, it was like a sharp taste on my nose? Or was it too dry? I thought it was too mature sake. However, when I drank it a second time after some time had passed, I felt a refreshing sensation in my mouth with a hint of sweetness without any cloying taste. I thought I was not good at this type of sake, but I could honestly say that it was delicious. I purchased it and had sake lovers drink it. Everyone was very pleased with the taste.

It was chilled in the refrigerator and served in a wine glass. I compared it with Echigozakura🌸 Junmai Daiginjo from Niigata. The aroma seems to be less intense than that of Echigo-zakura. But the taste of rice spreads in the mouth and it is sweet and easy to drink. When I warmed the glass in the palm of my hand and drank it, the sweetness increased even more. It may be too sweet for those who prefer dry sake, but it may be suitable for women.
