Sake degree -30 enjoyment. Smells fresh, like sliced apples. It has a smooth texture, pear-like nuances, and a slight effervescence, with a nice balance of a little sourness and bitterness. The lactic acidity, umami of rice, and a little bit of alcohol make it refreshing and delicious after drinking! I was surprised at how easy it was to drink because I was imagining a sweet juice. It has a buggy feeling like other sake is bitter because it is sweet but doesn't make you feel sweet. Day 2. Clear and good! Would buy again.

What the hell? Yum Kore! Shuwa shuwa fruity♪ I didn't know there was such a modern sake in Niigata? I was impressed. I definitely recommend it to people who like Kaze no Mori and Sancho. Perfect for a hot day like today. I drank the 4-pack bottle instantly after chilling it down to the perfect temperature. I'm sure I'll be a repeat customer.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

Purchased at Umeda Department Store. (Hankyu or Hanshin) One of seven breweries in Nara Prefecture that belong to the Nara Prefecture Bodai-Hashimoto Sake Research Association. See label on back. Rich, mouthfeel It is a sweet type, but the far and spreading umami and bitterness It was delicious and matched well with food. It became mellow and mild when heated to lukewarm and I could enjoy it with ease 😁. I am interested in the history of sake only when I taste Bodaihashi.

Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. Shirakiku Junmai Genjyu 16-17% 60% 720ml 1000yen approx. Purchased after visiting a brewery in Ibaraki. It is made from "Niji no Kirameki" from Ryukazaki City, Ibaraki Prefecture. It is sweet but not cloyingly so. The aftertaste is pungent and astringent. It is easy to drink, although it has a strong alcoholic taste. It has a complex aftertaste. According to bouken's information, it is made from rice Inochinoichi, which is a mutation of Koshihikari. I forgot to take a picture of it, so I borrowed it from bouken-san.
