A few restaurants were closed temporarily. Kanazawa was hardly damaged by the earthquake, and I hope everyone will come to Kanazawa! Now, Senmaida, rice from Senmaida in Wajima is partially used. There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

I bought this simple labeled sake because I was curious. When warmed up, it has a robust lactic acid aroma, a gentle sweetness, and a full, rich umami. It has a nice lingering aftertaste that seems to soak in. At room temperature, it has a slightly sweet and sour rice aroma with a banana-like flavor. This is the wrong brand it’s from Tochigi from Hokkan. The cheapest sake in Donquixote in Bangkok and so very smooth and balanced at medium chill. It’s actually very close to water.
Purchased at Mekada Sake Shop in Utsunomiya City A store that I stop by on my way home from a recent trip to the Tohoku region. I saw it wrapped in newspaper in the Tochigi Prefecture's local sake corner and bought it, believing the pop-up sign! It goes great with oden or anything with a Japanese broth! It made the sake taste much better. It was the most delicious sake I have ever had in the sake brewery in Tochigi Prefecture.

Tonight, our first series, Kikuyu by Yoshikawa Brewery from Isehara City, Kanagawa Prefecture. It is 100% Dewa Sanzu, Junmai Nama-no-Hajime made with Kyoukai No. 6 yeast. It has a ginjo aroma between cucumber and pear, and the first sip is clear with a full sweetness, but later on, a strong bitterness and alcohol taste follows, making it dry and smooth.

Tonight, we decided to open a new sake once in a while, so we had this one from the Yoshikawa Sake Brewery in Kanagawa Prefecture. Junmai Nigori Sake - Luxurious Aragoshi ✨✨✨✨. The sake seems to have been bottled after the new sake unrefined sake has been roughly fermented 😄. The aroma has a hint of pear and apple. When you take a sip, you can feel the gasiness and acidity, but it is juicy and delicious 😋😋😋😋 When you mix the lees, you can feel the sweetness of the rice and the creaminess increases, which is also delicious 😋😋.
