I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

Sake brought back from our trip to Niigata Sake recommended by the lady who was selling it. Very gassy 💨 Sake with a strong moromi Dry and crisp 💪. It's a nigori sake, but you can drink it with gusto as a food sake 🎵.

For my fourth cup, I decided on the "Koshihikari" which caught my attention! The palate is clean and refreshing, but as you taste it, it mellows out a bit with a banana feel. The acidity tightens it up so that it does not interfere with the taste, so it is well-balanced and easy to drink👍.

［Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

I want you to drink this sake when you come to Fukui! I wanted to drink it for the first time in a while and bought it in Sakai City! This brewery brews with hard water, but the taste is gentle! Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

@Koriyama Iando After having a drink in Omiya, I got tired of going back to Tokyo, so I jumped on the 🚄 and went to Koriyama. I decided to have a quick bite in front of the station, but it was crowded everywhere, so I went to a new restaurant that I found. They have a good selection of local sake, and I chose "Yuri", which I had never had before, and it is from the same brewery as Aizu Nakasho! I heard that this sake is brewed by a mother and daughter who are both sake brewing technicians! It has a soft sweetness at first, but eventually it becomes slightly dry and pleasant to drink. It is very easy to drink, which is impressive and delicious.

It's white and looks like ❄️⛄️. Sweet and mellow I was expecting it to be thicker, but it's pretty easy to drink 😊. I read the label on the back and it looks like it would be great with soda! Sake from the Takeshita Brewery, birthplace of former Prime Minister Takeshita. Gorgeous aroma, The fruity flavor is just as the label says. The sweetness is reminiscent of pineapple, The sweetness reminds one of pineapple, and gradually the bitterness appears and disappears. It is easy to drink and goes down smoothly, I thought it was a sake to be enjoyed on its own rather than paired with something else.
