Junmai sake made at the oldest sake brewery in Iwate Prefecture. I bought it with the feeling of buying a bottle of Laval, but I found it interesting because it has a strange wine-like flavor. It has a spiciness and a crisp aftertaste.
The last one was "Azumami".
I haven't had a drink even though I was in Iwate on business quite a bit.

Ingredients: Rice (domestic), rice malt (domestic)
(100% Iwate Ginotome rice is used)
Rice polishing ratio 55
Alcohol content 15
The strong umami of the rice spreads with tremendous force along with the acidity.
While maintaining a moderate acidity, the sweetness gradually seeps out, but it is quickly broken at just the right moment.

It had no sharpness and was kind of sweet!
Hard, mineral flavor. Bitter aftertaste. Slightly carbonated. Dry and crisp.
Little ginjo aroma and little fruitiness.
Dry sake with no playfulness. It may not be modern, but it is delicious.
