It arrived just a few minutes ago. This morning, the sake was pressed early in the morning. It seems I forgot to buy it last year, but this year I reserved it and bought it. I couldn't stand it, so I had a cup in my inoguchi. I love Tomikunishiki, but this year's Risshun morning pressing has a little acidity, a clean throat, and not much of an aftertaste. It's delicious!

January 31, 2024 Evening drink at home. January is almost over, so I drink some of the new sake that I had in stock. The second bottle was a bottle of Aki Tora Tosa Rei Shiboritate. Tosa Rei Shiboritate. I drink this every year. This is also a familiar sake that I drink every year. It has a fruity aroma It has a fruity aroma and a sweet taste like white peaches. It is a little sweeter than the first bottle, Sushasen Eiko, but The bitter taste on the back of the palate is very tight, as one would expect from Tosa sake. It has a bitter aftertaste. Every year I look forward to the Risshun morning pressing... this year, I'm going to enjoy a bottle of TENRANZAN! When the bottle is opened, it has a pleasant fruity aroma...freshly pressed, lightly cloudy, and fresh because it is freshly pressed...the balance of sweet and bitter is unstable, with a certain sharpness...but the aftertaste is crisp! Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!

After a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake. I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here.

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

Today, I'm going to have a pure blue. I mean, I went to Tomikunishiki yesterday to buy the Galaxy label. Unfortunately, it was sold out for mail order😭. Basically, I'm the kind of person who thinks that shipping costs are less than the cost of gasoline, so I thought I'd go and drive an hour or so to get there, but I didn't realize how popular the Galaxy Label was. I had no choice but to buy this Ikarashi Tokubetsu Junmai. It's sweet but delicious ☺️. I think I'll mail order it properly next year. I should have bought either Kamesen's SEL or Gohashi, which I saw at the liquor store on my way home.

I went to buy sake for my annual plum wine yesterday and found this. It's a sake made by reviving the oldest sake rice called Shiratama (test brewed sake). It tastes like Tomikunishiki, full and mellow... very delicious☺️. I love it after all. It's so delicious 😆.
