At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. It is refreshing and light to drink. Pleasant acidity and a clean aftertaste, but it was a bit unusual.

Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. I've always wanted to drink Taniizumi! I wasn't sure which one to choose, but on the other hand, it looks like the regular sake is harder to find, so I chose this one😃! It's a regular sake, but apparently it's Fukuroshibori! The first sip gave me the impression that it was a traditional sake☺️. The first sip was like a traditional sake ☺️ I could taste the strong grain flavor but then the sweetness and mellowness came through 😚 it wasn't dry 😆.
