This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

6/10 This is an autumn sake targeted in its name to be drunk with Akitonou fish. It is designed to be paired with fatty swordfish, which gives it a strong umami flavor. Am I right? It is a beautiful sake with acidity, so it has a lot of flavor, but the second half of the sake is very smooth. It certainly goes well with the Akinatai fish! This kind of thing is a strategy.

[First brand I've been able to drink in about 10 years👍] I got a bottle of Kiri-Tsukuba's light nigori nama-zake (unpasteurized sake) from a hometown tax payment. It is a popular brand that is consumed almost exclusively locally, but it appears that there was some new sake left from last year that will be shipped in December 2022. ✌️ Although it has been over a year, it has not lost much of its freshness with a slight effervescence, and on the other hand, it has a moderate calmness that is quite nice 😋. It has a sweetness, but the refreshing alcohol taste and crispness are the result of the aluzochu liqueur. Like last month's Onra, it's nice to be able to get a brand that is hard to find through hometown tax payment 😆.

Tonight, we have Kirizukuba Hatsushushibori Light Nigori from Urasato Shuzoten ✨ This one is popular with Ogawa yeast users. I was attracted by the combination of Ogawa yeast, Gohyakumangoku, and light nigori, so I bought it 😅. Let's start with the supernatant. It has a rich sweet aroma of muskmelon red flesh, which is typical of Ogawa yeast, and the taste is very delicious as if you bit into a whole muskmelon 😋 Also, although this sake is alky, there is no stinginess in the aftertaste at all, and the bitterness and spiciness show up and the balance is excellent 👍. The spiciness of the aftertaste is doubled when the lees are involved, making it a sake with a different expression. It is a fun sake 🤗.

Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

The first bottle I opened this year was Suzukagawa from the same brewery as Saku, which I got at the end of the year. The aroma, sweetness, acidity, and bitterness in the mouth are very similar. It wasn't as impressive as the Saku, but it was a delicious gem. At the end of the year, I mainly drank the same brands, but now that the year has started, I would like to try more and more new ones that I have never tasted before. This Suzukagawa is the first step, and I hope it will be a good start. I would like to continue my efforts to develop new sake.

Niigata Sake no Jin OSAKA⑰ The booth of [Koshinohatoyo]. I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen. The sake was -5 on the sake meter. Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake. It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste. Sake: Sake with a Sake meter of -10. Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range. Koshinohatoyo Junmai Genshu. The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning. The image of Rokubun Sen has changed to the image of Kanji characters like "pine blossom".

Niigata Sake no Jin OSAKA⑯ Echigo Sake Brewery of the Ozeki Group is a little-known sake brewery. Ozeki also has other breweries Shirakiku Brewery (Okayama Prefecture, Japan) Yamato Sake Brewery (Saga Prefecture, Japan) (I believe their sake brewery is closed) Narutaki Brewery (Saga Prefecture, Japan) Juraku Taikoh, Taki Other shochu breweries are also under the control of Narutaki. We drank Echigo's Umakuchi Junmai Sake Not too sweet, but tasty and delicious! Echigo's sweet Junmai-shu As in the past, it doesn't seem too sweet when served cold. It should be served at room temperature or heated. Nemuchi-san said it was not too sweet for a sake with -10 sake strength. I got the impression it was a classic sweet sake. Koshinohatoyo Junmai Genshu Strong and umami. Is it possible to sell it at a low price because of the Ozeki Group?

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

I'm here today for my department's farewell party! We had a beer, 2 mega highballs, and 4 bottles of warm water, and when they were all nicely tinted, we threw in some sake 🍶.
