The last Tobi Tsubame was not one of my favorites, so I took my revenge on Tobirazumi. It is surprisingly refreshing and not too sweet for a sake with a sake strength of -9.0. It is labeled as a "during dinner" sake, but I think it is more of an after-dinner sake. Either way, this was delicious 🙏.

I️ swallowed silver last time, so I️ am going to do gold this time. Silver to gold is rather natural. Silver was more dry than gold, so I don't know how it will be this time 🤣. I️ will open the bottle now. The aroma is apple-like 👍 The taste is also apple-like but with sweetness and umami of rice and less yamahai feeling 🤗It's very easy to drink. It's not more dry than dry, but it's hard to drink on its own 💦. At least it goes well with pizza and bulgogi. Personally, gold is delicious 😋.

I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

Here's the last GW drink we had It was a sake brewery I knew nothing about. This sake was sold as a summer draft sake by the Japan Meimon Shukai. It seems it was the first sake from this year to be released as a Meimon Sake Kai sake. Miyamanishiki from Akita Prefecture, Sake meter value +3, No. 9 yeast Citrusy aroma. The impression is that it is quite sweet and has a rich umami flavor, making it very drinkable. It is not a modern type of sake, but it is quite drinkable. A little acidic? The last of the Saga Sake is Ko-Imari Actually I drank 2 kinds of Aizu Homare before Ko-Imari😅 I searched for it and found out that it is an Imari limited sake! The sweetness is quite strong. It's a bit heavy sweetness. I think the sweetness is stronger than other Ko-Imari sake I have had. I would like to drink some raw sake of this if there is such a thing.

I bought a rare pre-natural sake that I was curious about when I saw Mariponnu's post. And it was an active nigori 🌟. It was supposed to be a spouting caution, but the liquid level didn't come up at all and the bottle opened quietly😁. When poured into a glass, it is quite solid and nigori. I'm not sure what to make of it, but I'm sure it'll be great. It's also very juicy and gassy. I thought for a moment that I could drink it quickly and easily after a bath... I'm not sure what to make of it, but I'm sure it'll be good for you. It was a bit like makgeolli, so I served it with kimchi and Korean seaweed and it was a great match 😆😆. I'm sure it would go well with grilled meat too😋.

A bottle given to me by my predecessor, who recently reached retirement age. He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test. Rice has become sake! The nose has a fruity ginjo aroma, but the fragrance is subdued. The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently. I had an image that Houyo was not my favorite, but this is good! Sake degree -30 enjoyment. Smells fresh, like sliced apples. It has a smooth texture, pear-like nuances, and a slight effervescence, with a nice balance of a little sourness and bitterness. The lactic acidity, umami of rice, and a little bit of alcohol make it refreshing and delicious after drinking! I was surprised at how easy it was to drink because I was imagining a sweet juice. It has a buggy feeling like other sake is bitter because it is sweet but doesn't make you feel sweet. Day 2. Clear and good! Would buy again.

What the hell? Yum Kore! Shuwa shuwa fruity♪ I didn't know there was such a modern sake in Niigata? I was impressed. I definitely recommend it to people who like Kaze no Mori and Sancho.
