I had seen Yamaboshi many times, but this was the first time I checked.
+I opened it and found the aroma to be unexpectedly refreshing.
When I drank it, I found it to be a little stimulating, but the overall flavor was clean and refreshing.
When I tried heating it up, the aroma didn't seem to match the sake, so I kept it cold for the next few days.
The sake was finished with a surprisingly light and refreshing taste.
Soba noodle shop in Sapporo Raccoon street...dry from the 5th cup. Yamagata Higashine City "Yamaboshi"...Bakudai dry. It is quite dry but has a lot of flavor. This is also good! I had "Tarako wasabi" as a side dish.

Dry with a bit of a tangy alcoholic burn 🔥 finish.
All around good sake with food, paired well with maguro nigiri, salmon nigiri but was even better with シシもフライ , garlicky おつまみエンドウ豆, and しそ梅干し.
Said to be the hottest sake in Japan
A peculiar aroma
Sweet and mild in the mouth for a moment. It is sweet and mild on the palate for a moment, but soon the umami flavor goes right up to the top of the mouth.
The moment you drink it, you think it goes down like water, but after a few seconds, you feel the weight of the sake.
The strong, sharp taste of sake lingers in the back of the nose.
It's not a sweet sake, but really dry! When the dryness goes through, on the contrary, it feels too clear on the tongue and the taste is watery.
It doesn't interfere with the taste of food.
