National Sake Fair 2025 in Osaka_55 Fukui Prefecture Booth ⑦ Hatakeyama Sake Brewery is located in Imajo, an inn town in Minami-Echizen-cho, Nanjo-gun. Representative brands are Yuki Kirara and Hyakkibune. ◉Yuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. When I drink Sakahomare, I often associate it with yogurt with citrus.

I ordered this because they said the money for this will be donated to the Noto earthquake. It will be hot 🍶. Oh no, there was only one left when I thought this was the Mexicali Tempura. It doesn't feel special, but it's a nice sake that goes perfectly with a meal. It wasn't stingy at all. I can't read the label. It's black, which is what a beginner in calligraphy did.

This is my favorite Hakutsuru 🍶. The black bottle with navy blue label is kind of cool 🥰. It is sold only in Aomori. The first aroma is slightly sweet. The palate has a full-bodied sweet flavor that is typical of Hanafukuyuki. It has a beautiful mouthfeel, partly due to the 50% polishing. The sharpness is not bad either. I want to buy a bottle next year and drink it carefully 🤔.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

Special Junmai-shu with 60% polished rice ratio This sake is brewed by the method called "Jusui-Jikomi". When poured into a glass, there is a strong ginjo aroma at first. The sake is bottled and sealed as soon as possible after bottling, so it can only be tasted at the mouth of the tank. It is said to be a rare gem with a limited distribution. It's delicious!

A web search revealed that Fukubito is I found on the Web that Fukubito was the first sake brewery in Japan established in 1917 as a joint-stock company by investment from sake brewing companies mainly in western Japan.
