I didn't know that Kitaya had such a sake! It was also sweet but fruity and not just sweet! I really like the taste!

I had my eye on this from the Niigata sake camp and when I was about to buy it, I thought to myself, "I'll get more points if I buy it at the brewery..." and so I bought it directly from them πΆ.
I also like the regular Kazan, so when it comes to Shiboritate, this one is a no-brainer: βΌοΈ
Personally, when I think of "easy to find, cheap and tasty" sake in Niigata, I think of Kayama π.
Opened the bottle right away πΆ delicious π.
Usually Kayama has a mellow sweet-umami image, but this one is a bit more assertive πͺThe juicy acidity and sweetness are well balanced and very easy to drink, but not too light either πͺβΊοΈ
Personally, I prefer the freshly squeezed one.

It was my first time to drink nama-zake, but it was so delicious and so smooth! I feel so stylish!
I had this sake during Christmas time last year. I tried it both at room temperature and warmed.
Type: junmai, rice: Haneuki, polishing rate: 60%, SMV: +4, acidity: 1.4, alc.: 15%
This is well-balanced sake for everyday enjoyment.
Aroma of rice flower and bananas. Slightly dry, mild and soft. It's not complicated and can be enjoyed with most kinds of food.
I learned that Haneuki is a table rice. The brewery is very old. It was established in 1597 which makes it the 13th oldest sake brewery.
Almost colorless and transparent (bright yellowish green)

Today I tried the Kasahara style beef shigureni. Here is the sake we paired it with π.
The aroma is not so strong, with a hint of fruit, malted rice, and alcohol.
The sweetness and umami spread gradually in the mouth, and there is a slight bitterness at the end.

Luxurious junmai sake and drinking comparison π.
The sake rice already seems to be at a different level.
The color is clear.
When the bottle is opened, it has a sweeter aroma than the Junmai sake.
The sweetness of muscat on the palate. The sweetness is the same as that of junmai-shu, but it is moderate and elegant.
It also has a thick umami flavor, as one would expect from a daiginjo.
The mouthfeel is mellow, and the ginjo aroma is strong.
Compared to Junmai, it is more rounded and harmonious.
I was surprised at how much difference there is between the two. βοΈ and realized it. πββοΈ
Houraisen is a clean ginjo-shu in general, and it is surprising that the aroma does not collapse even if it is left at room temperature. It is almost impossible for the sweetness to become rich or for it to have a Maillard-type burnt smell. It is a tough sake with a sweet, cappuccino-like quality. The soft, sweet flavor is refreshed by the gaseous and bitter profile, making this a delicious sake.

I came here on a business trip to Hachinohe π I unexpectedly found and ordered Asahi Taka instead of Mutsu Hachisen. It's been about 8 years?
It was sweet and rich, with a hint of bitterness at the end. It has been a long time since I have had a real brewed Asahitaka. The sweetness also makes me nostalgic πI paired it with sashimi, but it goes well with it. The button prawns are delicious π¦.
