I'm going to try a popular version that I haven't had very often at this restaurant. The smell of rice is strong, like cooked rice. The sweetness is quite moderate, as indicated by the dry description. The texture is tight. Aromatic rice flavor and sharp acidity. The rice flavor is not quite dry, but it has a voluminous flavor. Somewhat amino acidic flavor, almost filmy. Grain aroma at the end. It would go well with miso cucumber, or pork stewed in square cubes because it has a good slice of fat. (I ordered a highball first. I ordered the curry flavored chicken cutlet, it doesn't go well with it. A high-cost, spicy and tasty food wine. It may be served at different temperatures. When I first tried it as a hiya, I felt a bit of alcohol in the throat, so I tried it again with the recommended lukewarm temperature... it was beautifully mellow and the sweetness and umami increased❗️. Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

We attended a year-end party for parents of my second son's high school club! Although there are some rank restrictions, we enjoyed drinking all the sake we could drink 😆. The 2nd glass Wadarai Dry Junmai This is also a brand I've never had before! Although it is dry, it is surprisingly fruity! It has a clean and crisp taste, so it went in easily.

The second day in Miyako, Kamaishi, and Kesennuma🎵 was spent in Kesennuma, the first visit to this area in 38 years. During the day, I was impressed by the ruins of Kesennuma Marine High School, a relic of the Great East Japan Earthquake, and at night, I was thankful to be alive thanks to the seafood of Sanriku. On the second day of our fulfilling Miyagi trip, we had a special menu at the hotel: Otokoyama bonito sake. Normally, I would not buy this kind of snack, but the woman I was with from Ichinoseki recommended it as a great dish. Even if it's not bonito, it washes away the umami and goes well with oily sashimi. It is also good when served cold, as the acidity is more pronounced than with cold sake. Ebisu is also a good omen as it is a sake from the sea. It is a pity that Mizutori-ki Hiyadoroshi was sold out.

This is Asahi Kiku Arahashiri, a Fukuoka souvenir 🍶. It's in a nice looking bottle, but it seems that during the new sake season, Fukuoka's sake is often served in these stoppered bottles. I thought it was nice because it can be corked tightly so it is easy to reuse. The initial aroma is slightly sweet, like cooked rice. In the mouth, it has a mild sweet flavor with a slight astringency. It finishes with a slight bitterness. The astringency was a bit strong, but the sake was delicious with a calm and full flavor typical of Asahi Kiku ✨.
