I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.
