The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

The mouthfeel is slightly fruity to malty and mellow, followed by a light bitterness that tingles the tongue and leaves a firm lingering taste on the nose. The description says it has a unique and addictive mellow flavor, and that is exactly what it tastes like. It is the kind of sake that makes you want another and another.

#Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

LAYER drank both Apple🍎 and Pear🍐 and both were so good, so this is another safe bet. Even 2 months ago, I still remember the aroma of this grape. I was like 💦 "What the heck is a grape? It tastes like a juice-like grape liquor. But it was juicy, sweet, and refreshing, without the heaviness of red wine. It was a horrible, or rather too delicious, drink that was easy to drink on its own and finished in no time at all 😋💕🍇.

Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Trophies of the GW Kanazawa - Takayama trip. When I think of canned draft sake, I think of Kikusui Ichiban Shibori, but since this sake is also from Ishikawa Prefecture, which is famous for its sake, my expectations naturally went up. The design of the can is also austere. Chill it in the refrigerator and open the bottle! Oh, you can feel a slight shwash and a refreshing sweetness (Kikusui Funakuchi Ichiban Shibori has a mellow sweetness). It's delicious. When the temperature settles down a little, there is a slight bitterness in the aftertaste. This is a repeat purchase. I hope they sell it in Kansai too!
