The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Morimoto Morimoto Junmai Sake "Hatsu-no-Takimikiri 2022". This is my first time to drink this brewery. It was a delicious one 🍶🎶 and served chilled. It is a dark, umami, spicy sake, but as the temperature returns to normal, the sweetness and sourness come through. I think it is a good sake at room temperature or warmed. All of Shizuoka Prefecture's sake is delicious.

Nagurayama Shuzo's Aizu Shikon is brewed in Aizu Wakamatsu City. Okayama Prefecture. Niimi City. Sanko Masamune Co. Sanko Tenpyo Yamahai Junmai Unfiltered Nama-shu Omachi Michihiro Yamauchi's sake was also hard to get my hands on because of the gutsy, robust image of his sake, following in the footsteps of Katsumasa Takagaki, the toji of the company. We had it cold. The color is a little yellowish. The aroma is sweet, with a lactic acid-like fermentation aroma of Yamahai. The mouthfeel is smooth, smooth, and heavy. The taste is mild at first, but then the juicy lactic acid acidity is strongly felt, with a burnt caramel-like flavor and a heavy grain-like flavor. The aroma on the nose is softly apricot. The flavor is carried through to the aftertaste, and the end result is a very strong and strong alcohol taste. It seems to be good warmed up, so it's time for a visit to Nonbei Yokocho. It was warmed up to human body temperature or lukewarm at first, with a very mild and mellow acidity. This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!

At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. It is not flashy, but it is a good sake. ‼️
