This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! Sakemonogatari in Kansai(*) It is a hiyaoroshi of honjozo with a slightly sweet taste and a sense of grain! It is well balanced, probably because it is a honjozo. I would definitely like to drink it with an appetizer! The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.
