I was in Akashi on a business trip 🚄 First time I got off at Nishi-Akashi and had local sake heated with Akashiyaki 🐙 which I haven't had in a super long time.　It feels spicy at first but the sweetness comes later 😯 Surprisingly, I like it a lot 😊. I'll drink it again when I go back to Akashi 😁.

Sake making seems to have been finished by August or September 🍶 We compared the sake we could get our hands on 🍶. I wanted a dry, dry drink. There are days when I'm in that mood. You might say don't choose raw, but I realized it after the sake bottle came. I enjoyed it with yudofu. It fits my mood today. When I think of dry, dry sake, I think of Niigata, Hiroshima, and Kochi. I admit to disagreeing.

Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.

Last night was a New Year's party with a couple I met last year. We had dinner at a nice restaurant and then went to Kokubuncho. After the fourth bar, I finally had a chance to drink sake. I have known the owner of this sake bar on the outskirts of the city for about 25 years now. The lighting doesn't look like it's the kind of place you'd enjoy sake, but don't worry about that. The selection is quite good, so go for something you've never tried before. First up is Hiryu, the one with Tatsumi Fujinami's red towel. A dry sake with a refreshing yet tasty flavor, just like Mr. Shinzawa! Thank you very much for your hospitality!

It's been a long time since I've had a dry sake, but I'm ready to try it💦. The aroma is fruity👍. I'm not a fan of too much dryness, but it was a good experience 🤗.
