I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!

Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.

Nigori Sake (Japanese rice wine) First time drinking Chokyu's nigori 😊. I always buy Chokyu when I see the new label ✌. The ori is quite a bit more and has a strong fizzy feel to it. It has a lot of umami and a hint of sweetness that is typical of Chokyu, and yet it has a clean dryness that makes it a dangerous sake that you can drink with gusto 🤭. This one is a bit different from the matured Omachi sake I had last year, and I have the impression that it swings in a very sweet and juicy direction. I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. It's not for everyone by any means, but I thought it was a good sake with a sense of the creator's commitment. Thank you for the treat 🙏.
