Wakayama Pref. Ito District. Hatsuzakura Sake Brewery Co. Hatsuzakura Junmai Ginjyo Unfiltered Nama Sake This is not "Hatsuzakura" from Yasui Shuzo Brewery in Shiga Prefecture, nor "Noto Hatsuzakura" from Sakurada Shuzo in Ishikawa Prefecture, but "Hatsuzakura" from Hatsuzakura Shuzo in Wakayama Prefecture. It is served cold. The color is clear and the yellow color is clearly visible. The top-tasting aroma is slightly caramelized first, followed by alcohol aroma. The mouthfeel is voluminous with a juicy acidity. The nose is filled with aromas of dried fruits and ripe fruits. The mouth is filled with a nutty flavor and a hint of sweetness, followed by a slightly strong acidity. After swallowing, a bitter taste remains on the tongue, followed by a slightly pungent aftertaste. It has a slightly classical flavor, but it has the volume of a draft sake and is very drinkable. On the second day after opening the bottle, the nuttiness subsides a bit, the acidity settles down, and a brown sugar-like richness emerges, making it extremely delicious. It was the day of Tachibana StampVal, so I went to only Ikoma among many stores participating in the event. I don't always go to other shops😅. I thought I was drinking it for the first time, but it looks like I had it last year at Harukas😅. It has a beautiful taste without a strong sense of maturity. Very easy to drink hiyaoroshi 😋. I've always wondered which came first, former Takarazuka Revue troupe member and singer Koshiji Fubiyuki or Koshiji Fubiyuki, but it seems Koshiji Fubiyuki's brand started in 1991!

Bought directly from the Mukho Sake Brewery... Aroma: Slightly cemedine? As the label on the back says, it's a solid and heavy sake. It is like a local sake, and the bitterness in the aftertaste is a bit of a problem, but...it soaks into your guts...it goes well with strong flavored snacks...smoked hoya and stewed tuna...I enjoy it with a little bit of it....

Although it's next door, I haven't had Osaka's sake yet. I was thinking of Akishika or Katanozakura for Osaka, but I found this one at AEON today while shopping. There is no outstanding sweetness or spiciness, but a well-balanced taste. It's a good sake for eating. When I paired it with yuba and fried eggplant with sesame oil, I felt like I could drink as much as I wanted 😋. Good sake in the neighborhood too👍.
