I wanted to drink sake while watching the cherry blossoms, so I brought a small bottle of Hatsuzakura 😚Sitting on a bench in front of the cherry blossoms, my partner and I toasted 🍶✨The sake was a strong honjozo 😘The snack was crab cakes from Sugiyo in Noto🦀They go great with Hatsuzakura 😚👍 This Hatsuzakura is 100% Sakurada sake which survived the earthquake😇Hanami and Hatsuzakura were a good collaboration🥳✌️

We were served a reconstruction support sake blended by Sakurada Shuzo and Kurumata Shuzo, both of which were severely damaged by the Noto Peninsula earthquake😋. It's a little more refreshing than the usual Hatsuzakura, but has just the right amount of sweetness and rice flavor 👌It's still a delicious sake✨. Next, we warmed it up to lukewarm using the "Kanmakase" sake warming machine we installed this year 😚♨️ The aroma is milder than cold 🤔The sweetness and umami in the mouth is a bit more muted than cold, but the aroma through the nose is much more delicious 😊. It was a cold day today, so I liked it warmed ✨🥰🥰It is a delicious sake that can be enjoyed cold or warmed 🥳👍.

profile iconUnlike regular Jyuseki, it seems to use a yeast called Kyo-no-Saki that produces a lot of malic acid. It doesn't say, but according to Nisshimura Sake Brewery's Instagram, it is an unfiltered sake. It is gorgeous, like rum, and a little bitter. The sweetness is moderate. Or rather spicy? The cool taste is perfect for the coming season! As the temperature rises, the appleiness comes out, but at the same time the spiciness increases. Personally, I prefer the "Jujishi" that I've had so far. I made a mistake when I drank it before, but I have to mix the Jujyoku with the sake, otherwise the lees sink to the bottom and the taste changes a lot. If you drink it with the lees mixed in, it might have a little sweetness.

The medium body makes itself known while the floral mid tones become present. Acidity come late, but is gentle, like a mikan ice cream. There is a small alcohol bite on the after taste, bit it washes away with every sip. Truly an easy sake to drink and enjoy. Perfect after working in a Teppanyaki restaurant.

The second glass was a special junmai sake from Sakura Face in Morioka City. Sorry. Sakuraface is often included in all-you-can-drink plans at izakaya (Japanese style pubs), so I had that image in my mind. (^_^;) In fact, the all-you-can-drink plan is not so tasty, so my preconceived notions might interfere with my taste buds... (@_@) I changed my mind and took a sip. Oh, it is indeed a little more aggressive, but tasty in its own way. I don't think I would actively want to drink it, but I wonder if it would go well with food?
