I'm definitely a garlic person when it comes to bonito and I'm going with Matsumori from Ibaraki. It's very refreshing and brings out the flavor of the bonito without interfering with the bonito. I have been enjoying all the sake from Ibaraki lately. Well, I'm a person who likes anything as long as it has alcohol in it... 😇 The fourth picture is shirasu (baby sardine) kakiage. You don't know what shirasu is until you eat it.

Purchased at Nakamura Sake Shop in Toride. The aroma is of a pulpy red type of melon, a bit like a smooth chervil, and the sake lees flavor is not too strong. The taste is heavy, with other elements more noticeable than the smoothness of the raw sake. The alcohol content is 19%, but it is not too strong and punchy. I looked at the production date and found that it was dated 24.11...but it looks like it was released last year. I bought this sake because I wanted to drink a nama-shu, but I guess it was not the right sake for this time of the year when hiyaoroshi sake is distributed. It's normally tasty, but maybe for a cooler time of year. It has a sweetness, but it is not spread out in a mischievous way, and the center of gravity is heavy and cohesive.

Happy New Year! After making Zoni, I finally had my first drink. I started the year with Kaneizumi, which I received from a friend the day before yesterday. Rice used is unknown Since this brewery does not have a sake brewing license, it is said that the brewery goes to Nagano Meisho to make sake. Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.

National Sake Fair 2025 in Osaka_70 Iwate Prefecture booth ⑤. Fukurai Shuzo is located in Kuji City. There is also a Raifuku Sake Brewery in Ibaraki Prefecture, so it looks like a mix-up. ◉Fukurai Special Junmai Fukurai is made from Ginotome sake rice. It has a soft mouthfeel, but the taste is rich and dark with a sweet umami flavor that is quite to my liking. The brewery is located in Kuji City, famous for being the location for NHK's morning TV series "Amachan".
