The sake is made and labeled in a way that takes advantage of the climate of Oarai, Ibaraki. It is refreshingly dry when served cold. When heated, it becomes more floral and friendly. I'd like to try it with sea bream or flatfish from Oarai.

Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. I've had many Tsuki no I's with this kind of atmosphere! I think it will probably become milder and more flavorful with aging, but I like it better as it is because it has its own personality.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It's been a long time since I've drunk a bottle of Raizen ❗️. The aroma is subdued for a Daiginjo🤔. The taste is generally dark and robust😊. I can feel the sweetness and flavor of the rice but I can also feel the alcohol as well😅. I'm not sure if it's a good thing or not, but it's a good thing.

Low-alcohol sake inevitably retains some sweetness during the manufacturing process, but how to prepare it is a challenge for each sake brewery. The first part of the bottle has a refreshing, melon-like to citrus-like aroma, and then it becomes smooth. The convergence of the two is acidic and refreshing.

National Sake Fair 2025 in Osaka_70 Iwate Prefecture booth ⑤. Fukurai Shuzo is located in Kuji City. There is also a Raifuku Sake Brewery in Ibaraki Prefecture, so it looks like a mix-up. ◉Fukurai Special Junmai Fukurai is made from Ginotome sake rice. It has a soft mouthfeel, but the taste is rich and dark with a sweet umami flavor that is quite to my liking. The brewery is located in Kuji City, famous for being the location for NHK's morning TV series "Amachan".
