Purchased in January at Kinase, a local sake brewery in Mito. I chose this brand for the Ibaraki local sake category. I was really torn between Watanabune and this one, which I had never had before. When I checked the aroma, I found a sour, vinegar-like smell... Looking at the label, we discovered that it had been bottled more than half a year. I didn't realize how much a draft sake deteriorates after half a year, even if the bottle is unopened... The taste is also undeniably deteriorated, but it is drinkable without any problems. It has a slight melon-like flavor with almost no sweetness. It is easy to drink as it is refreshing and sharp. I drank it much more smoothly. There is no doubt that the original is delicious. I want to revisit Matsumori for this...! But I didn't know it smelled like this. I learned a lot.

I couldn't go anywhere during the second half of GW because I had to stay at home. So on the last day, I will just enjoy the feeling of traveling with this cup of sake. I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.

We saved the Hakurakusei we had brought for another time and opened a bottle of Okutanba provided by my sister and her husband, as we did last year. It is dry but slightly fruity and easy to drink. I was wondering what they were going to do with the prestigious sake associations, and then they released it 😊. Slightly effervescent, sweet and sour. Is it white malted rice? It's so acidic that I thought it was white malted rice. It also has a slightly dry atmosphere. It has a unique taste, but it is delicious. I wonder if the product for the Meimon Shukai that was sold before was Yuyamanishiki, but instead of using Yuyamanishiki, they used Gohyakumangoku to separate it from Honami.

Happy New Year! After making Zoni, I finally had my first drink. I started the year with Kaneizumi, which I received from a friend the day before yesterday. The aroma is good, but the taste is sweet and fruity at first, followed by a refreshing acidity that lingers in the mouth, and finally the taste of rice lingers. The sweet and fruity taste fills the mouth at first. According to my friend, he has been drinking Kaneizumi since the old days when it was made by Horimoto Shuzo. and then it was taken over by Aihara Shuzo of Amego no Tsuki with the toji-san. After the brewery went out of business and was succeeded by Aihara Brewery It is said to be his favorite sake even after he took over the brewery with the master brewer. The way the aftertaste pulls away from the 🍐 is fantastic👍. Originally made by another brewery, but when they quit, Aihara Brewery took over the brewery.
