This brand was made on a trial basis and is an odd one, using sake instead of brewer's alcohol. He said he will not drink the same brew in the future.
The taste is complex, and seems to have two major taste peaks.
The acidity of Yamahai comes first, followed by a mellow almond-like aroma and umami from the mid-palate. The aftertaste is long, with a slight bitterness.
If I drank this without knowing it, it might have just felt like a peculiar sake 🤔If I tasted it knowingly, it felt like a complex assemblage of calculated deliciousness: ☺️

The tour ended at Unebi station. I am heading to Nara City. The purpose of this tour is to conquer 29 breweries of Nara sake. I have already completed 26 breweries. There are only 3 breweries left! I would like to accomplish it this time.
I arrived at Kintetsu Nara Station at 18:00. We waited for 45 minutes, but it didn't seem like a long time. I was so nervous. I was filled with a sense of nervousness that I had finally achieved my goal today.
