It was obtained on a trip to Aizu last year. After nearly half a year of sleep, it is now ready to be served! When the bottle is opened and poured, it has a fresh, sweet, crisp aroma of pears and apples. The mouthfeel is light and clear. It is smooth and full of sweet umami, with a sharp citrus-like acidity and astringency. It has a refreshing saltiness with just the right amount of roundness and sharpness. It is a delicious taste that can be enjoyed both during a meal and on its own because it is beautiful without being too assertive! A sense of balance that makes it seem complete from the start. The freshness that makes it hard to believe it is fire-roasted is also brilliant ✨. It exceeded my expectations as I thought it would be a simpler special pure 👐. It really embodies the all-around goodness!

I was out buying yesterday and got 14 on 4/1 due to a chance encounter with a liquor store! I was very impressed with the April encounter, but at the same time, the real problem of inventory came up, so I opened a bottle of "Saku" that I had been saving for today👍. When I opened the bottle and poured it, the aroma was elegant and gorgeous, with hints of muscat and melon. The mouthfeel is smooth and clear. The melon-like aroma that comes through the nose and wraps around the tongue with a soft touch of beauty. After the gorgeousness is gone, the umami of the rice, which is mainly a soft sweetness with a sense of plumpness, spreads. Then, the acidity and astringency gradually appear, and the wine is pulled up smoothly and beautifully! It's been a while since I've had "Saku" at home, but the taste does not betray my expectations and I'm smitten. This month is going to be busy, but I think I can get through it with the power of sake 🔥.

It's the end of the fiscal year and I've been multi-tasking both physical labor and desk work, so today I'm taking a break from the purely large type 🍶. When I opened the bottle and poured it, the aroma was clean and refreshing, with lychee and white grape flavors. The palate is clear and free of clutter, with a fine, bright sweetness and a white wine-like stimulation of acidity and astringency. It has an elegant, jewel-like clarity and a balance of sweet and savory flavors that are not overly broad. The lingering astringent taste comes as if to tighten the taste, which is pleasant, and the cleanness of the wine disappears without any change. This is a pure Dai class gem ✨. Thanks for your time 😌.

It was hotter than expected today, so I went for low-alcoholic sake! When the bottle is opened and poured, the aroma is sweet and sour and penetrating. The mouthfeel is clear with a soft touch. The sweetness spreads out with purity after landing softly on the palate, just like a gorgeous dancer! The low alcohol and acidity give it a light feeling, and the spicy astringency that comes slowly at the end of the palate closes it out. The cool and refreshing sensation that quickly disappears. It has a freshness like apple or citrus when you drink it quickly, but when you taste it thoroughly, the light flavor of the rice comes out, so it is delicious without losing its sake-like character ✨. It has an argo-style flavor, but I have the impression that it fits well into the sake category. It's a good workmanship...!

The eleventh and last sake is "Jikin," a sake future type that has been on my radar ever since I entered the restaurant! It has a brilliant apple and pear aroma with a mild sweetness and umami. It has an elegant taste with a refreshing citrus-like acidity and astringency. The stable balance of Jikkom adds to this, so it has a thick yet refreshing taste! It is so beautiful that you can't stop grinning. It is a quintessential golden combination 🤤. Then, the mongolian ramen to finish off the meal! I promised myself another trip to Kinugawa next, so it will be my first trip to Tochigi in a few months 🥟.

For the 8th cup, my friend went to Yufuin, I visited Amagase, and we talked about Oita at the Uwajima Ferry, so we went to "Chiebijin" 👍. A bright apple-like aroma with a gentle touch. The seventh glass was Sawaya Matsumoto, which I had not had since I drank "Moribaha-ri Usu Nigori" a long time ago. It has a refreshing, clear and fresh taste with a slight carbonation. The sixth cup was Omi chanpon + local noodles, so I'll go with Shiga sake! It has a mild melon-like aroma. It has a beautiful dryness with a mineral taste and a mellow umami taste with a sense of rice that is not too heavy. The final dryness and crispness make it easy to pair with a meal 👍. The aroma and flavor seemed to have expanded since the last time I drank it, so it was probably freshly opened(?).

The fifth cup dares to be a Tokyo sake with a strong presence in the flavor! It has a clean aroma and a taste of brown sugar and caramel. It has a classic flavor with just the right amount of acidity and richness. The spiciness gradually spreads from there, so it is surprisingly refreshing without being too strong. It is a delicious taste that is easy to match during a meal as it is cut up as it is ✨.

The fourth glass was on the topic of Gunma, so I selected this one! It is clean and refreshing, with a calm and gorgeous white peach-like flavor. It has a light touch typical of Gunma sake and the flavor of light rice. It has a bright green apple-like aroma and is a delicious and refreshing sake! A friend of mine says that Gunma = spicy sake. But this one was easy to drink and is a gem.

The third drink is a seasonal product of "Eikofuji" which I was going to buy but went through due to stock! It is smooth and juicy with apple and muscat flavors and silky sweetness. The astringent accent that comes in gradually is also delicious like grapes, and even unfiltered raw, you can drink it smoothly without feeling its heaviness ✨. I wish I had bought this one: 🙂‍↔️

Today, I went to a day trip to a hot spring with my friends, and after that, we went for a regular(?) drink! After that, we went for our regular(?) drink! These idle moments are also important 😌. I'll start with my friend's favorite, Tenpyo✨. It is clear and light, with a fruity sweet and sour taste of apples and berries. It is clean, not too assertive, and finishes well, so it is a well-balanced taste!

Last night, after 6 consecutive working days, I had the last of this season's Shiboritate series! I bought this last year at Kinugawa Onsen (hot spring) and this is the last of the new sake series👍. When I opened the bottle, the aroma was of chestnuts, tropical fruits, and nuts (it had an impact similar to that of the Noriguchi-san series we drank on our recent trip to Hokuriku). The mouthfeel is round, viscous and smooth. It is rich yet bright and clear. Sweet, full-bodied rice flavor. After the caramel-like sweet astringency and moderate acidity, it quickly disappears with a lingering astringency, so even at 19%, I was able to keep going! It has a well-balanced taste with umami, sharpness, and aroma similar to Hokuriku mellow sake styles. I think this may be my favorite "Toryokushi" I've ever had.

Only two more Shiboritate series of this season are left! The last of the Gunma series will be "Yuu", which I was expecting along with "Akagisan" ✨. When opened and poured, it has an elegant and gorgeous aroma of melon and muscat! The palate is so clear and light that you can feel its purity. Smooth and gentle on the tongue. The taste is juicy like green fruit with moderate sweetness and freshness 🍈. Toward the end of the bottle, the freshness of the acidity and astringency tighten and round out the dryness, making it a well-balanced delicious wine that is both elegant and easy to drink! This is the second time I've had it and it's a brand I've added to my favorites 😋, including the cosmetics, which is hard to believe it's a bag pressed. I am looking forward to this year's Maikaze series, which I was impressed with after drinking it for the first time last year!

February is also the month of 🐶labels! This time we have an adorable puppy with a smile on his face...! When the bottle is opened and poured, it has a gentle and bright aroma of melon and pear. The mouthfeel is light and cool, typical of Akagisan. The taste has a freshness that is typical of unfiltered sake, with a punch of spiciness and astringency. The full flavor with a sense of rice and gorgeous fruity overtones come out from the transparency as if spreading out. It has a freshness with a little gas, so it is a delicious combination of lightness and mellowness! It has a nice dry astringent sharpness and is not too heavy for an unfiltered draft, so it goes down smoothly ✨. This bottle is also the actual New Year's pressing. The taste is different every year, so we are looking forward to next year!
