This is a sparkling type wine that has been sitting for a year. We will open the bottle to organize the stock...! When you open the bottle and pour it, the aroma is like sugar candy or brown sugar. The mouthfeel is still gaseous and shiny, but the sweetness has become richer, probably because it has been aged for a year. It has a rich sweetness similar to that of a noble sake like Wasanbon or Bekko candy, and a lingering astringent taste with the purity of Akagisan and the freshness of carbon dioxide gas. This is like a candy and a whip, and it is habitually delicious! An unexpected combination of richness and crispness. It is also interesting that it is an aged sparkling wine 👐.

I bought "Hanamup" before. Last year was Rikuwada, so this time I decided to try Omachi👍. I wonder if they will add a new 720 size in the future..................................! When I opened the bottle and poured it, the aroma was calm and fruity, like peaches and apples. The mouthfeel is sweet and deliciously gorgeous! It has an elegant, full-bodied sweetness and softness with a sense of elegance. The light acidity and a little astringency that follows. Ripe sweetness and umami like mango or yellow peach. And yet, in the second half, a clean and refreshing feeling also emerges, making it a truly well-rounded taste ✨. Today was my last shopping trip of the year! As expected, the stock was full with a lot to choose from, so I will be drinking it slowly until the end of the year 🫣.

I bought two bottles of Maikaze in the spring and they have been sitting for almost half a year. The winter lineup will be coming in soon, so I'm going to open the bottle now 👍. When I opened the bottle and poured it, the aroma was like pears and muscats. I think it has more fruitiness than the one I drank in the spring! The mouthfeel is clear and clean, as is typical of Akagisan. Immediately after, a soft and juicy flavor spreads gradually with grape and apple-like flavors. At the same time, it also has an established austere taste and a lingering aftertaste like powdered green tea. The gentle and sweet flavor of "Maikaze" is still present. It has lost some of its youthfulness, perhaps because it has been laid down to rest, but it is a delicious taste that allows you to feel the beginning and end of a story! A collaboration of autumn and spring 🌸🍁. I am looking forward to the freshly squeezed one in winter...!

We have completed our 7th (tentative) lap of Japan for the time being, given that Okinawa is on hiatus for a few years ✨. The last stop will be Ishikawa Prefecture. I'll be drinking Kaga no Tsuki, the honjozo type I've been drinking a lot👍. When I opened the bottle and poured it, I could feel the aroma of sugarcane and its refreshing aroma. The mouthfeel is crisp, but the mushroom-like flavor and mature umami gradually spread out. The balance of umami, sharpness, and softness. The depth of flavor, even in a honjozo, is truly Ishikawa sake. The aftertaste is also clean and smooth! As I gradually approach my 10th round, I can't stop being excited to meet new brands that I haven't seen yet...!

Purchased at the sanctuary along with the previous "Fukkai". The selection of cup liquors is also very good and I always have a hard time choosing the right one👍. When the bottle is opened, it has a beautiful yet rich aroma of nuts and tropical fruits. The mouthfeel is pure and clean, just like a jungin sake, but it is a Chiyomusubi. A wave of umami comes immediately after. The caramel-like sweetness and astringency is followed by a punchy spiciness and acidity. The taste is well integrated and has a richness to it! I bought it at the Holy Land before. I had seen the "Fukuda" series here many times and had seen them at the Nagasaki airport, so I was curious about them, so I bought one! When I opened the bottle and poured it, the aroma was of pears and apples. The mouthfeel is fresh with a firm and gentle flavor. It has a fresh, yet firm and gentle flavor on the palate, with a gasiness, a refreshing acidity, and a mild sweetness. It is a juicy and delicious combination of brightness and mellowness! As you savor it, you can also taste the rich umami of the rice and the sake yeast, and it has a nostalgic and broad flavor just like the ocean. The sake has a smooth aftertaste that keeps the sake flowing! A pair of gouty fish is the perfect accompaniment. It goes perfectly with the mild flavor of ankimo (gizzard liver)!

Wakakoma" is a Tochigi sake that I've never had before and I've been curious about it. I selected the autumn hiyayogoroshi as a Tochigi souvenir on my recent trip to Tochigi ✨. When I opened the bottle and poured it, the aroma was pleasant, like marron or wasanbon. The palate is soft, moist and sweet. The flavor is spicy, with hints of pepper, roasted onion, and consommé. This deep flavor is somewhat reminiscent of Western-style food. However, there is also a mild sweetness and bitterness like that of wasanbon and café au lait, making it a unique and addictive flavor! You can feel a wide range of flavors, and it is a delicious taste that will make you groan! The flavor is more complex and deeper than initially imagined! This was a debut sake of "Wakakoma" that I would like to try my hand at often in the future 🐎.

As October is drawing to a close, I will enjoy the autumn of "Akagisan" again this year before the freshly squeezed sake arrives! When the bottle is opened and poured, it has a calm, orangey aroma with a core of sweet and sour. The palate is clean and light, and while it has the Akagisan character, the bright acidity and gentle sweetness like tangerine are typical of hiyaoroshi! While tasting it, a mushroom-like matured flavor emerges from the back of the bottle, giving it a truly autumnal flavor. However, the maturity also has the purity of "Akagisan" and is not too assertive, so you can enjoy it with a moderate sense of balance. I have a feeling that the sweetness and acidity are just right, and this one is even more delicious than last year's. I am looking forward to next year!

This is one of my favorite souvenirs from Kinugawa. It is my favorite so much that I want to buy it every time I go to Kinugawa or Nikko area! When the bottle is opened and poured, it has a gorgeous, fresh aroma of melon, pear, green apple, etc. The mouthfeel is also fresh and clear with a sweet and sour astringent taste. The palate is also fresh, with a clear sweet, sour and astringent taste. It is more acidic and astringent, reminiscent of kiwi ✨. There is a lingering acidity in the aftertaste, but it is clean and non-habitual, so you can feel the freshness in the aftertaste! If I had a bottle of 720, I would definitely buy it! It's a great sake that I would definitely buy if they had a 720!

I found the one you are talking about and bought it to try 🍶. It's been a while since I've had a "Gekkeikan" itself! When you open the bottle and pour it, it has a sweet aroma like honey. The mouthfeel is smooth and light. The balance of softness, lightness, sweetness, and acidity makes it a sports drink, which is understandable! The aftertaste is also refreshing and not at the level of a junmai sake, so I feel it is more accessible to sake beginners than to those new to sake👍. 300 is empty in an instant. I wonder if it is the taste and drinkability that only Fushimi sake can produce... it makes me think a lot 😌.

Since I have already had the junmai pair of "Sho Shiki" and "Kaorutaka", I decided to open this junmai type sake. My expectations for Hiroshima sake, which I have not had in a long time, were high! When I opened the bottle and poured it, it had a light, fruity aroma that made me think "Aizan! The aroma is light and fruity. The mouthfeel is the three musketeers of clean, round, and smooth. It has a moderate sweet acidity and a sharp dry astringency that comes in the latter half. The gentle and elegant sweetness like Japanese sweets, and the soft but lingering astringent aftertaste that comes slowly. It is a delicious wine with elegance and chicness just like the label! It is a beautiful and clean sake with not much to mention. I was impressed by the power of this award-winning sake ✨.

The 10th glass was a "Shinmasa" ecru, which I have not had in a while along with "Jikin". It has a pleasant aroma of wood vat and citrus fruits, more subdued than "Flax Cat".
