November 2017, at Tora no Kakushi in Shibuya, Tokyo. The brewery is Hara Shuzo, located in Kashiwazaki, Niigata Prefecture. It is also a rice-producing region, and the rice used is 100% Niigata rice. The neck label reads, "Echigo Snow Storage Cold Whiskey," and the design of the label resembles snow crystals. Fourth drink of the day (first two were plum wine and sake liqueur; sake from the third) at Tora Vigilante in Shibuya, November 2017. The brewery is Omuraya Sake Brewery in Shimada City, Shizuoka Prefecture. The brewery is Omuraya Sake Brewery in Shimada City, Shizuoka Prefecture, and has been in business for 180 years. Wakatake" is the brewery's traditional brand. It is made from 100% "Honorifuji," Shizuoka Prefecture's sake brewing rice. The eye-catching label illustration is by Sonobe Namiko, who specializes in female characters. October 2017, at the usual Toraya. The brewery is Chiyozu Toraya Co. in Sagae, Yamagata Prefecture. As a Hanshin fan, the brewery name and label felt familiar to me. The fact that it was a dry hiyaoroshi suited my tastes perfectly. I also liked the fact that the sake is made with rice grown in Yamagata Prefecture.

October 2017, at Tora Shikan in Shibuya, Tokyo. The first cup of the day was "Tamagawa Natural-brewed Yamahai Junmai VINTAGE". The label doesn't say, but it was "kamizu-hiire" (heat-fermented with added water). The label says it is "delicious heated," but I had it cold. It was a little out of focus, but as the label says "vintage," it had a brownish tint like an old sake. It is a strong sake, so it will not be overpowered by strong flavored dishes such as chicken nanban. The brewery is Kinoshita Shuzo in Kyotango City, Kyoto Prefecture. The second drink of the day in October 2017 at Tiger's Brewery. The brewery is Kumazawa Shuzo, located in Chigasaki City, Kanagawa Prefecture. The website says "the only brewery in Shonan." It also has a restaurant and a bar, so it would be fun to stop by when you are out and about in the Shonan area. Hanazakari is a sake produced by Hanamori Shuzo in Yaotsu-cho, Gifu Prefecture. The rice used is 100% Hidahomare produced in Gifu Prefecture.

September 2017, as the fourth brand of the day at the Tiger's Vigil in Shibuya. An authentic junmai sake. The brewer is Koedo Kagamiyama Shuzo in Kawagoe City, Saitama Prefecture. The label says only that the rice and rice malt are "domestically produced," but the website says, "We are the only sake brewery in Kawagoe that uses only rice and water grown in Kawagoe. We produce and sell a reissue of the traditional local sake "Kagamiyama" in small quantities and with quality first. The company claims to be the only sake brewery in Kawagoe that uses only rice and water made in Kawagoe. The brewery closed its doors on September 30, 2000, but due to the desire to revive it, the brewery was completed on February 1, 2007, and brewing began on February 5, 2007, marking the first step toward reissuing Kagamiyama. https://kagamiyama.jp/company/ Knowing this kind of context makes me want to support them even more.

September 2017, at Tiger's Tail in Shibuya. This was the third of four brands we tried as two of us visited the restaurant that day. The large red logo and illustration of "zanbaku" (wreckage) and the two characters for "blame" are intriguing. Why "wreckage" is a mystery. Why "YOU CAN NOT KILL ME" and why "walk on the wild side" is also a mystery. But the sake is said to be delicious... The brewery is Miyoshikiku Shuzo in Tokushima Prefecture. The name "Ikeda-cho, Miyoshi City" refers to the area where Ikeda High School, which became famous at Koshien, is located, which was merged with Ikeda-cho (on March 1, 2006).

I guess the name symbolizes the time-consuming process of brewing sake using the traditional sake brewing method. The brewery is Shibata Shuzojo in Okazaki, Aichi Prefecture. Sake brewed with soft water is delicious, isn't it?

In September 2017, at the usual Shibuya Tora Shukan. The brewery is Seiryu Shuzo in Saijo, Ehime Prefecture. The name "9 (Nine)" comes from "Association No. 9" yeast, or is it derived from the sake degree of +9? The concept of the brewery is "coexistence of umami and dryness. The rice is also 100% local Ehime Shizuku Ehime. I like this kind of attention to detail.

September 5, 2017, as the second drink of the day at Tiger Rider in Shibuya. Ryuki sounds like Kamen Rider (that's Ryuki). The brewery is Matsuya Shuzo in Fujioka City, Gunma Prefecture. It is a rare sake brewed with red yeast. It has a slightly cloudy white peach color. The sake is sweet with a sake strength of -17. Cold soup (a local Miyazaki dish) after drinking sake is indescribably delicious.

September 2017, at the Tiger's Eye in Shibuya, Tokyo. If Sei Shonagon were alive today, he would probably say. "Summer is hiyaoroshi. With char-grilled chicken or chicken nanban. The brewer is Akabu Shuzo, a sake brewery in Otsuchi-cho, Iwate Prefecture, which was severely damaged by the Great East Japan Earthquake of 2011. My eyes lit up when I spotted the words "Resurrection Brewery" on the back label.
