An authentic junmai sake.
The brewer is Koedo Kagamiyama Shuzo in Kawagoe City, Saitama Prefecture. The label says only that the rice and rice malt are "domestically produced," but the website says, "We are the only sake brewery in Kawagoe that uses only rice and water grown in Kawagoe. We produce and sell a reissue of the traditional local sake "Kagamiyama" in small quantities and with quality first. The company claims to be the only sake brewery in Kawagoe that uses only rice and water made in Kawagoe. The brewery closed its doors on September 30, 2000, but due to the desire to revive it, the brewery was completed on February 1, 2007, and brewing began on February 5, 2007, marking the first step toward reissuing Kagamiyama.
