October 2017, at Tora Shikan in Shibuya, Tokyo. The first cup of the day was "Tamagawa Natural-brewed Yamahai Junmai VINTAGE". The label doesn't say, but it was "kamizu-hiire" (heat-fermented with added water). The label says it is "delicious heated," but I had it cold. It was a little out of focus, but as the label says "vintage," it had a brownish tint like an old sake. It is a strong sake, so it will not be overpowered by strong flavored dishes such as chicken nanban.
The brewery is Kinoshita Shuzo in Kyotango City, Kyoto Prefecture. It is a place with good water.
