The brewery is Seiryu Shuzo in Saijo, Ehime Prefecture.
The name "9 (Nine)" comes from "Association No. 9" yeast, or is it derived from the sake degree of +9? The concept of the brewery is "coexistence of umami and dryness. The rice is also 100% local Ehime Shizuku Ehime. I like this kind of attention to detail.
