At the usual BAR (8) Due to the system at Sake-no-wa, I can only post one brewery per post, so I'm posting this as Hakurakusei, but it's a blend of Hakurakusei's yogurt sake and Umenoyado's Aragoshimikan ✨. The master recommended this drink to me a long time ago and I finally put it into practice: ☺️ The rich taste of the yogurt and the refreshing taste of the mikan blended together so well that I would recommend this drink to anyone who doesn't like alcohol 😋. By the way, I visited this bar for the first time exactly one year ago yesterday and fell in love with the personality of the master and started coming here 😃. I'll be coming back regularly from now on 🙏.

Hi Hiro 😃 Hakurakusei yoghurt wine by itself is of course delicious, but the tartness of the mandarin oranges blends nicely with it 😊. I think it's totally possible even if it's not a liqueur, it's good 🍊

At the usual BAR (7) The master was opening a bottle of Jikkom in front of me, so I was able to have a freshly opened bottle 😊. The top aroma was slightly pineapple-like 🍍. The aroma was fruity like pineapple tropical fruit, and the sweetness and umami gradually came in, and then the gasiness and acidity added to it, and I was already in a happy state. ☺️ I knew it was good before I drank it, but when I tried it, it was so much better than I imagined it would be, no wonder it's so popular that the average person can't afford it ✨. I would love to drink Jikin at home someday 😋.

At the usual BAR (6) Hard to find orange label ✨ We compared the taste while remembering the taste of Akaban Oumachi that we drank just recently 😊. There was almost no top notes, and the aroma was slightly fruity. It has a pleasant, bright gasiness that is typical of a nama sake, a slightly medium sweetness, a strong but not overly assertive umami, and no bitterness. Nabeshima is delicious no matter what you drink, and it's no wonder this orange label is so popular 😊. Personally, I prefer the Akaban Oumachi from before 😋.

At the usual BAR (5) The customer next to me was drinking it and it looked delicious, so I ordered one myself ✨. It is brewed with wine yeast, so it smelled like white wine on the nose 🍷. The aroma starts with a berry aroma, the sweetness is moderate and the acidity is strong, almost like drinking a white wine, which is also good 😊. It's not too sweet and refreshing, it almost felt like a white wine rather than a sake, so I'm sure it would be great with white meat fish meuniere or something like that. ☺️

The top aroma is fruity and fruity: ☺️ The aroma is a beautiful apple-like ginjo aroma with a clean sweetness, low umami and acidity, and almost no gassiness. I searched online to review the taste and couldn't find this sake, is it a limited edition? I should have asked for more details from the master 😓.

At the usual BAR (3) I wanted a nigori, so I ordered this one 😊. This will be my first time at the brewery✨ Fruity aroma on the nose that I like 😊. The first sip has an elegant melon-like aroma, a silky nigori-like flavor and sweetness, a beautiful gasiness, and a moderate acidity, and it's so good you won't be able to stop once you start drinking it ☺️ I was very satisfied with this sweet and juicy sake that I like ✨. Sake from Saga is all delicious and good ✨

At the usual BAR (2) I drank Oroku for the first time a while ago, and since then I feel that I have lost my resistance to classic dry sake. The initial aroma is smoky 🤔. The sweetness is almost none or a little bit small, and there is also a chirichiri gasiness. I felt the umami and alcohol strongly from the beginning to the middle of the bottle, and a little fruity aroma from the middle to the end 🤔. Personally, I like sweet fruity sake, but Ohroku is between modern and classic, not too dry and full of umami, so I really enjoyed it 😊.

At the usual BAR 🍶. I wanted to drink SEA, but I was also interested in AIR🏖️ Almost no top notes, a little lemon and other citrus aroma 🍋. The first sip starts with a refreshing aroma, sourness, and gasiness like a Greffle Sour or Lemon Sour, with a moderate sweetness and almost no alcohol. It fades out with a strong bitterness at the end ✨. It was a very tasty, refreshing summer sake with a strong acidity 😊.

I had to go back to my parents' house, so I was a little excited to open a bottle of this one, which I had carefully chilled in our refrigerator. The aroma on the nose is a little pineapple-like 🤔. The first sip 🤔. The first sip is very juicy and the umami is very refreshing and fruity. ☺️ The nose starts with a fruity aroma like pineapple or apple, which is the same as the top nose, followed by a slightly stronger acidity, and then the umami of rice peculiar to Omachi gradually spreads. It has a sweetness, but it is not a sticky sweetness, but a refreshing sweetness, and the lingering taste is short to slightly medium, ending with a clean and crisp finish without any bitterness or other unpleasant tastes ✨. I've only had Nabeshima with purple yamadanishiki and blossom moon, but so far this was a rich fruity sake that I think suits my palate, thanks for the treat 😋!

Here is the last one to close! It will be my first Ten Frog 🐸. I was surprised to see the alcohol content on the back of the label, it's 8% 👀. There were beautiful bubbles from the moment it was poured into the glass, and I didn't notice much of an upfront aroma. When I took a sip, the sweet and sour grapefruit-like aroma spread out, and the gasiness, low alcohol, elegant sweetness and acidity made it a dangerous sake that I could drink forever 😂.

We chose this one because of the Nagano connection from the Zenkichi we had earlier✨. The Shinshu Kamerei we had previously had a few days after opening, but this time we had a freshly opened bottle: ☺️ It starts with a particularly strong gassy sensation, followed by a spread of sweetness and umami, with no bitterness or astringency, and a nice slow fade-out. It's definitely a consistent good taste, and I'm sure I'll be back for more 😋.

I decided to try a dry sake and the master recommended this one 🍶. The palate is calm and not sweet, with a slight pineapple fruity aroma 🍍 Overall, I thought it was refreshing, dry but not too alcoholic, and a bit of a food drink that you can easily enjoy 👀. I still don't prefer dry sake, but it was one that made me think that dry sake is not so bad. ☺️

I asked the master to choose a drink that I liked ✨. I'm not normally a big fan of soju, but this one broke all my preconceptions 🥊. I was told that they use a type of rice called Shunyo for part of the rice used, and it was my favorite sake, with a muscat and pear-like aroma, sweetness, umami, and gasiness mixed together just right, and without any of the unique smells that are typical of sake with alcohol added 😊. It was probably without a doubt the No.1 drink I had today!

It is said to be the one and only sake brewed with "Gin-no-sato" sake rice grown on the island's soil and underground water that was searched for five years in Iki, where the brewery is located (quoted on the Todoroki Sake Brewery website). From the fruity aroma of strawberries and lychee, the sake has a good balance between the unique, calm sweetness, umami, and moderate gassiness, ending with a small to slightly medium bitterness that fades out nicely✨. I got hooked on Yokoyama with their summer jungin, and this was another must-try for those who like sweet and umami 😊.

This is Koei Kiku's summer sake, Sunburst🌻, which has been on my mind for a long time. I've heard that it focuses on acidity, as in burst of acidity, and it certainly has a lot of acidity, but the strong gassiness keeps the acidity from being too assertive, and the moderate umami from the rice and the bitterness that comes at the end make it a well balanced sake ✨. The logo of a certain coffee shop looks like the label of Koei Chrysanthemum today_(:3)_

Whenever I find Hiragana Takachiyo, I just end up buying it 😂. Melon seems to be the flavor concept here 🤔. So here's the opening 🍾. It is said to be a bit dry, so we'll start with the top clear liquid first 😋. The top aroma is almost nonexistent. The top aroma is slightly subdued, and the same melon-like aroma as the top aroma is slightly in the middle, the gasiness is medium to slightly strong, the umami is small to slightly medium, and the acidity is medium to slightly strong. When mixed with ori, the melon aroma became stronger, just like the concept. The aroma is still melon, and the gasiness is a little less than the top clear aroma, but it still has the same pleasant "shuwa" feeling 🫧. The sweetness and umami are more pronounced, the acidity is less pronounced and the lingering taste is longer than in the supernatant, but it does not last as long as in the supernatant. Since it is only the first day of opening the bottle, I will enjoy the changes in flavor slowly. ☺️

Today is Tanabata ⭐️ And since it's jackpot day, I tried to play scratch but failed miserably 😂. Well, I thought I'd buy a star-inspired sake and bought this one✨. I've heard rave reviews from everyone at Sake no Wa and a certain YouTuber, so my expectations were high even before opening the bottle 😊. The first aroma is of tropical fruits like pineapple 🍍. When you put it in your mouth, you will feel a little bit of strong gas, pineapple and muscat aroma, followed by sweet and sour taste, just like a tropical fruit cocktail. ☺️ The lingering flavor is small to medium and finishes with a slight to medium bitterness, so you will not get tired of drinking it! I love sweet and juicy sake with a pineapple aroma, so I knew it would be a good match from the start, but I never expected it to be this good. ......I'm very proud of you, Mr. Kangiku. 🙇‍♂️

Today seems to be Wakanami day, so I bought this one & opened it immediately 🍾. I wanted to buy a sparkling, but I fell in love with the ukiyoe label by Katsushika Hokusai and chose this one✨. First of all, the aroma smells like grapes and muscat 🍇. When you take a sip, you can smell the same grape aroma and a little gas. ☺️ The sweetness is not persistently sweet, but well balanced with the acidity, and the slightly strong, robust flavor comes in waves 🌊. And it ended with a small to medium bitter taste that snapped me out of it 😊. The first wave of sweet juwa, the second wave of umami, the third wave of bitterness, and the feeling that they come in waves over and over again is the greatness of Wakanami 🤔. I had a wonderful Wakanami day, thanks for the food 😋.

I saw it at SAKE MIZUHASHI in Roppongi on a business trip to Tokyo last week and bought it on impulse 😊. The top aroma is sweet and full-bodied with a hint of caramel 🤔. When I took a sip, the tangy gassy, white peach-like flavor and gentle sweetness preceded the sip, then the rice flavor and koji aroma spread from there and faded out nicely without any bitterness or astringency ✨. After drinking it, I realized that it was polished to 29%, so I thought it would be a clean and refreshing sake... but it was a modern rich sake with a robust umami and a fruity and gorgeous aroma like biting into a whole peach or other fruit 😳. I wanted to drink it in small quantities and carefully, but I found myself drinking it so fast that I emptied the four-pack 😅. The owner of SAKE MIZUHASHI and I had a lively sake talk, and although I was a first-time visitor, I was very grateful to him for selling me a rare sake from the back of the store. 🙇‍♂️
