Tonight, we open this season's bottle of Hizirizm sake mother active sake, not cloudy rizm 👏. After arriving at our house, it had been resting for a little while in Lemacom, but I was afraid to open the bottle 💦 However, as other reviewers have written, it was so quiet that it was surprisingly quiet 😅. What was that? I was wondering what was going on, but when I drank the top clear, there was a slight tingle on my tongue, and the flavor was adult calpis, but there was almost no soda... 😨. No, it tastes good. However, it is better to think of this as something else, and since it is not an active sake mother, there may have been a gap between the sake quality design and the finished product ❓❓❓❓ I'm going to let the other bottle sit in the hope that the secondary fermentation in the bottle will progress: ☺️💤

Tonight, on the last day of the three-day weekend, we will be drinking this sake 🍶💁. Sairai Tokubetsu Junmai Unfiltered Nama Sake 2024BY✨. It's been quite a while since I've had a Sara ☺️ I especially like the "Red Sara" as it is called here 😉. The aroma is a strawberry milk 🍓🥛 with a sweet and gorgeous ginjo aroma. The flavor also has a juicy attack, like eating fresh strawberries, but the second half has an interesting transition to mainly greffle-like bitterness, as is typical of Tokujun. The finish was crisp and delicious as expected 😋😋😋😋.

Tonight is a three-day weekend, but the cold wave has hit🥶, so I'm in hibernation mode, so I'm starting an early dinner at the Kitchen Drunker😅. It's been a while since I've been to a brewery 💁. Purple Space Junmai Ginjo Star Label 2024BY✨🌌🌌. Sake brewed with Ginga no Shizuku sake rice from Iwate Prefecture 🍶 Lately, I'm starting to realize that I prefer indigenous varieties over major varieties 😉. I love the balance between the acidity, juicy fruit sweetness, and bitterness, which is like a grenfre with a dash of white sugar, while the aroma and taste are both refreshing and easy to drink 😋😋😋😋😋. There are so many variations of Purple Space that I haven't caught up with all of them, but I'd like to try other brands little by little 🤗.

Tonight, we will open this bottle as it is the night before a three-day weekend 💁. Chiyonohana Special Junmai Sake Namazume 2024BY✨. This is a special junmai sake from the same brewery as the Imi. It looks like it was originally distributed in the prefecture, but thankfully it's becoming too popular with the Imi community. ☺️ I don't know the rice specs, but it has a sweet smell of white sugar and a slight pineapple nuance that I think is mainly from Ibi no Homare. The taste is also easy to drink as it has a rich sweet/umami base with a bitter, pungent, sharp taste in the second half 😋😋😋😋😋😋. Sugihara-san's sakes have a warmth that makes you feel relaxed 😉.

Tonight, I'm not tired of drinking out, so here's a bottle to accompany my nightly drinks 💁. Iraka Gin Beni Unfiltered Unrefined Nama Sake 2024BY✨. This is the third sake from Iraka 🍶. The sound of the gas being released when the bottle is opened is wonderful💓. The aroma is of cupped apple nectar and pear, typical of Shinshu sake. The taste is also juicy with a firm acidity ☺️ and then the rice is sweet and tasty with a sharp taste that I really like 😋🐴😋😋 I had a happy moment with a series of refills right away. One more day to go this week. Let's keep up the good work 💪.

Tonight, I opened a bottle of this for the first time in a few days after a long day of drinking outside. Jikin Junmai Ginjo Hachitan Nishiki Unfiltered Nama 2022BY✨. It's been a while since I've had a bottle of Jigikon, but I let it sit for 2 years 😅The jacket has already been redesigned, so the retro austerity shines through 😎. I started with the aroma, wondering about the degree of aging. The aroma is clear and transparent, with a hint of wild herbs and sweet white sugar. The taste is on the contrary, a little matured honeyed apple sweet and sour with a delicious umami flavor 😋😋😋😋😋. The aftertaste has a nice sharpness 👍 I must say it's a quintessential example of high perfection 😉. Sieg JIKON

I was out of town tonight on a wild business trip, so I'm posting at this hour. Here💁 from my favorite sake brewery in Akita. Harukasumi Chestnut Label White Sake Komachi Nama 2024BY✨🌰. This one uses Kameyama yeast. The aroma is clear Japanese pear, grapefruit, and herbs. The mouthfeel is very pleasant with a refreshing acidity, followed by a delicious sweetness from the rice 😋😋😋😋😋. A great bottle of sake with a harmony of sake-like and modern drinkability👍

Tonight, I would like to drink this one by Sentori as a relay from yesterday's Tanaka Sentori 💁. Sentori Organic Naturals X 2024 Sparkling ✨🫧. I wanted something a little more refreshing for my first drink of the weekend, so I chose this one: ☺️ It was cold in Lemacom, but the secondary fermentation in the bottle was in progress. From the aroma, you can feel soft rice malt and lactic acid as if it were naturals as it is named because it is a sake with a raw yeast yeast and additive-free brewer's yeast. The taste has a full-fronted dryness with a crisp and neat character, starting with a shrieking gas. As you drink it, the lees gradually become entangled and it turns a cloudy white color, increasing the lactic acidity and the delicious richness of the rice. Again, I'm in the mode to drink it up as fast as I can 😆.

Tonight, I was rummaging through Lemacom for a weekend dinner and found this collaboration sake, so I'll have it 💁. Tanaka Sengyo ver.2023 Itoshima pesticide-free Yamadanishiki Junmai Sake✨. This is a collaboration between Tanaka Rokugo's Itoshima Sake Brewery and SENKYO, and it looks like the pesticide-free Yamada Nishiki from Itoshima was made by SENKYO using the SENKYO Naturals method of pesticide-free, live yeast and brewer's yeast, and then returned to the Itoshima Sake Brewery to be finished in the main brewing process 👀. The aroma and taste are both very clear, with a greenish wild grass nuance and a beautiful acidity, and the sake is light with no rice clutter. The back palate has the appearance of an orthodox junmai sake with a full flavor of rice and a nice sharpness. The simple and innocent sake from the Itoshima Sake Brewery is delicious after all 😋😋😋😋😋.

Good evening, my favorite brewery for a series of bespoke sake, following on from yesterday, but it's been a while 😊. Yoshida Kurau - Ishikawa-mon Kojo-shu Sparkling - ✨🫧. This may be my first Sparkling from the same brewery. I opened the crown cork but it didn't go out of control, so it's safe. ☺️ When poured into the sake cup, it has a light nigorigo color and gas is weaker than expected. The standing aroma is honey sweet behind clear herbal and chemically-like aromas. The taste is a harmony of the attack of the tangy gas and the sweetness of the kijoshu and the dryness of the yamahai, with excellent balance 😋😋😋. Overall, the transparency and lightness of the structure of the sake, which does not feel too much like a kijoshu, makes anyone who drinks it roar that it is delicious 🤗.

Tonight, as a continuation of the Nigorin picks, we had our first sake from this brewery in a long time. Shinomine Ginwa Junmai Daiginjo -Yamadanishiki Rough Running Light Nigori Nama Sake-✨✨✨✨ I've had Shinomine and Kushira before, but what is this Ginwa? I thought, "I've had Shinomine and Kushira before, but what is this Ginwa? The aroma is creamy and fruity with hints of melon, muscat, and pineapple, typical of Yamadanishiki. The taste of rice and lactic acidity give depth to the flavor, and the aftertaste is very crisp 👍. This is one of the best tastes of Nigorin picks 😋😋😋😋😋😋.

Tonight, I'm dropping an oddity from a brewer that I haven't seen in a while 💁. Rice and Honey (Aged in Oak Barrels) 2024🌾🍯. It's a collaboration sake between Ina and Agave Brewery and Tsukegoro Brewery 😊 I think this is the first time for Ina Agave, isn't it? Sake and mead, and aged in oak barrels 😉. When opened and poured into the sake cup, it has a slight yellowish hue. The aroma is very complex, not only honey, but also lush aroma of wild grass, smoky oak, and energy drink elements like cola, guarana, and Oronamin C. The taste is slightly sweet on the attack and has a slight sweetness to it. The taste is a slightly sweet mead on the attack, but in the second half, there is a sourness, a sake-like rice flavor, and a dry aftertaste that is extremely delicious 😋😋😋😋. Craft saké is gaining citizenship, but mead x sake seems to have even more room for growth in terms of interest: ☺️

Tonight, let's go with the second post 😊. The 10th of every month is Tenbi Day, so we still had a few left here 💁 by Fujioka Tenbi. Amami Tokubetsu Junmai Hi-iri 2023BY✨✨✨✨ It's been 2 years since the production of this Kuroten 😅 Well, I can afford to drink it because it's hi-iru, but I'm too lazy to drink it. I love the sound of the gas escaping when the bottle is opened. When I pour it into the sake cup, there are fine air bubbles at the edge of the bowl, which is beautiful 👍 The aroma is not aged at all, but still fresh and juicy aroma of muscat, and when I take a sip, the soft sweetness and acidity of the rice floats on my tongue, and the sharp dryness that is typical of Tokujun is also nice! It is a light yet core sake with an impeccable taste.

La Jomon Yamahai Junmai Shu Takumon Koji Triple Masamune Nama Shu 2024BY✨✨✨ Following the standard sake the other day, this is my personal favorite koji triple brewed sake 🍶. From the standing aroma, soft and gentle cucumber, muscat, and herb like No.6. The mouthfeel is like potassium, but with the edge of acidity of koji sanbai, it is delicious as expected 😋😋😋😋 The swelling flavor and dryness of yamahai in the latter half is also perfect and it will be empty in a second 😆.

Tonight, I'm opening a bottle of Ver, the middle of the one I received the other day 💁. Kaze no Mori Challenge Edition Midori 2024🌪️🌳 I'd like to drink it with reference to the review the other day 🤗 When I pour the sake, there are fine bubbles with very fine effervescence. The aroma is strawberry and mint 🍓 as before 🌿 The mouthfeel has a good sense of gas, followed by a clear and beautiful sweet and sour taste, with a good balance of bitterness and spiciness on the back of the tongue 😋😋😋. I tend to drink only the special ones at Kaze no Mori, so I would like to try a regular sake after a long time, so I will do so next time 😊.

Good evening, I've been home drinking for the first time in a while and have stopped posting, but I'll resume. The other day, I had a glass of Sumi Sake from this brewery, where the nigori draft of this season was still delicious. Hirotogawa Junmai Ginjo Nama Sake 2024BY✨. Not only Nigori but also other sake are of high quality, but since it is a draft sake, I'll drink it quickly 🤗. I love the sound when I open the bottle and make love to it ♬♬♬ The standing aroma is a clear chemi aroma and green wild grass 🌿 The sweet and sour taste with juicy orange 🍊 in the mouth is very delicious 😋😋😋😋😋 The bitter after taste changes my impression like having coffee ☕️ after a meal. Quite simply, Hirotogawa has a stable flavor no matter what you drink 😊.

Tonight, I'm opening a third bottle and switching to this one because Pukupuku is low on both bottles 🤩. My body is craving sugar, so I'm going to have this one as an after-dinner drink and a long-time layover drink 💁. Senkou UA Rabbit 2023 🐇🐇🐇 This is a Kijoshu type Nigori Sake made for the 2023 Chinese Zodiac New Year 🍶 I couldn't let it sit for another year until the zodiac comes around. I was thinking of drinking 2024 and 2025, but I'm going to drink 2023 first😅. The aroma is of sweet strawberries and honey 🍓 with nuances that are typical of aged or noble sake. The sweetness and acidity of fresh juicy strawberries have an impact while enjoying the texture of the bubbles on the tongue. In the second half, the expression changes to umami and bitterness, both of which are delicious 😋😋😋😋. When the lees are stirred completely, the bitterness and dryness are added to the finish, making it more drinkable and more to my liking 🐴🐴.

Tonight, the second in a series of drinking comparisons 🍶. Pukupuku Brewing's Hop Doburoku The First from Odaka ✨✨✨✨ This is the first of two hoppy doburoku from Pukupuku Brewery, the first brewery to own their own brewery 💁✨✨. When you pour the top clear liquid into the sake cup, it is cloudy and gassy just like the Limited~. But the standing aroma has the sweetness and acidity of lactic fermentation of rice like yogurt. The mouthfeel is gassy, hoppy, lactic citrus, silky sourness and sweetness, but the second half is catchy like a Calpis soda, but never sweet, so it's a definite repeat 😋😋😋😋😋. If you stir it well, you can enjoy the texture of mashed rice and feel the lactic acid and citrus dryness of hops more directly, which makes it fun to drink. ☺️ It's hard to choose between the two 😅

Pukupuku Brewing's Hop Sake The First from Odaka - limited edition -✨✨✨ ㊗️ This is the first one that graduated from Phantom with their own brewery 😊 It was worth supporting them in small ways 🥺 Congratulations 🎉! Now, the first one is from the limited ☝️ It's not the doburoku type, but I was a little nervous when I opened the bottle because of the sound of the gas escaping, but no problem 😓. When I pour it into the cup, it is cloudy and slightly effervescent, and the standing aroma is pink greefle, which has a minty hop character like a mojito. ☺️ In the mouth, there is a strong lemon sourness and bitterness coming from the tingling gas, and the taste is clean and dry but has some depth, and I can't help but keep having more 😋😋😋. It's been a while since I've had a Pukupuku, but it's still delicious 😻

I've taken a bit of a break from posting this evening, but I've had a little thankful sake from a brewery I haven't had in a while 🍶💁. Ise no Kuni Dedication Hakusake Oise-san 2024BY⛩️🙏 It is said to be a sacred sake dedicated to the god of Ise by Mimuro Sugi/Imanishi's brewery 🍶. It's a sacred sake, but it's a nigorami/nagori sake, which is very fashionable 😎. When I opened the bottle and poured it into the sake cup, there was a gas that made it sound delicious at this point 😋. The aroma is like Yamadanishiki? It has a melon and greenish herbal taste. The mouthfeel is tingling and moderately gassy, and the sweet and sour flavor of the rice and lactic acidity spreads out in a jolt 😋😋😋😋. It has a sharp aftertaste and I can't stop drinking 😆. It's been a while since I've had a sake from Imanishi Shuzo, but they exceeded my expectations 😊.
