Good evening, my favorite "Abe", but actually this is the first time I've had the pleasure of seeing it at home 💁. Abe Yasuda-Torigoe 2023 🌾🌾🌾🌾 It's a series made with different rice from different fields with no yeast added. I picked this up because it has some kind of autumnal jackets: 🖐️ Just like the jacket says, the aroma is a refreshing citrus 🍊 with a rounded tangerine flavor, while the acidity is firm and fresh with a mild umami aftertaste and a full flavor 😋😋😋😋😋. It is the perfect expression of an autumn evening 😊.

Tasake Tokubetsu Junmai Sake 2023BY✨ I've had this sake many times before I got into the sake swamp, but I'd like to try it again. ☺️ Let's start with the aroma. It has a mild but refreshing citrus and minty nuance. The taste is light and tasty with white peach-like rice sweetness and soft acidity that draws you in 😋 The bitterness and spiciness on the back end are not too harsh and can be drunk smoothly with a long aftertaste 😋. Once again, it was a satisfying bottle of teppan-shu.

Good evening, it's deep autumn 🍂, but I'm going back in time to the end of summer a year ago and opened this bottle 💁. Senkori Sparkler 2023 🎆🎇🎆🎆. As usual with the overslept series, the Sentori family is in hibernation and I'd like to hurry up and enjoy drinking it before the new sake comes out😅. The aroma is not at all twisted and has a nice aroma of banana🍌 melon🍈 peach🍑 ☺️ The taste has a characteristic acidity, but the overall impression is gentle and the dryness peeks out at the back of the mouth, but I think it is expressed as if it will disappear in a flash as the title suggests 😀. I still want to be exposed to this acidity on a regular basis 😋😋😋😋😋😋.

Tonight, on the last day of the three-day weekend, I had an impulse buy because I wanted to drink for the first time in a long time. Hanayu Junmai Daiginjo Aizan 2024BY 💖🌋. It seems it's been 2 years since I've seen a past post of Sake-no-wa. This platinum jackets are always dazzling and divine 🤩. I also just pushed myself so-so at the gym so I'm going to inject my exhausted body with a sweet Hannam Love Man 🫶. The aroma is white peach 🍑, a hint of pineapple, and the sweetness that is typical of Hanamura with its high white sugar. The flavor is also a little sticky peach nectar🍑 with pineapple acidity that is beautifully and elegantly balanced and very tasty without being sultry 😋🤤🤤🤤. The finish is also very addictive, with bitterness and spiciness felt at the back of the tongue and disappearing smoothly down the throat, leaving a lingering sweetness that seems to float in midair, making you want to drink it again 💮💮.

MIYASAKA Miyamanishiki Direct Kumi Shiboritate Nama-nihonshu 2023BY✨ This is another brand from the same brewery that originated the No. 7 yeast and is famous for "Masumi". The concept seems to be different rice, use of No. 7 yeast, and direct pumping 😊. Surprisingly quiet when opened. The aroma is not flashy, but has a slight hint of white sugar and caramel (because it has been a little while since it was made?). Houou Mita - Mikumari - FLY HIGH 2nd 2024BY 🐦‍🔥🐦‍🔥🐦‍🔥 Influenced by the deliciousness of the 1st Houou Mita, I was able to purchase the 2nd Houou Mita, so I'm going to open the bottle 🍶. Like the 1st, it has a lively gas and a gorgeous ginjo aroma with a hint of juicy fruit at the same time 👍. The first sip has a pleasant acidity and sweet rice flavor with bubbles that make it easy to drink 😋😋😋😋😋 The dryness of the finish is also present, making it an excellent bottle like the 1st one 💮.

Tonight, open this bottle from Gunma Sake no Sei 💁. Saint EVOKE Yamadanishiki Unfiltered Unrefined Nama Sake 2024BY✨. This is a different line of sake from the usual Hizirizm. I imagined it would be easy to drink since it is an unfiltered, unfiltered, raw Yamadanishiki sake, but from the nose, it has nuances of aged tortoise-shell candy. I was a little surprised at the hard-boiled quality of the sake. It is suitable as a food sake, and it seems to be good when it is heated up, as it becomes more rounded and fuller 🍶 It has a so-so character when served cold on its own. ☺️

Kawatsuru NORA ~Yeast additive free~ 2024BY✨✨✨✨ It seems that this brewery, known for Sanuki Kuraudei, has gradually improved the quality and commercialized the raw yeast production that they started on a trial basis during the Corona period 😊. The sake rice seems to be a variety called "Sanuki Yomai" which is also a new experience for me 🤗 From the standing aroma, it is not flashy and has a nuance like milk 🥛 or condensed milk beyond yoghurt 😳 But when I take a sip, there is a weak chili gas, a structured acidity, milky and tropical juiciness.

Garakudai Narugami Nigori Hi-iri 2023BY✨ It's a dry sake line from Masayo, my favorite brand 😊 I've had it a few times outside and it was delicious so I bought it for home 👛. I started with the top clear sake. The standing aroma is mild and thin with a hint of melon. The first mouthfeel is easy to drink with soft rice sweetness and acidity, but it gradually becomes dry and sharp with a strong impact and finishes with a crisp, sharp finish. It has outstanding potential as a food sake. When mixed with muddy sake, it becomes quite cloudy. The quality of the sake itself does not change, but the lactic acidity increases a little and the dryness is softened. Sometimes this type of dry sake is also intoxicating. You will not get tired of drinking it and the sake will go down smoothly 😋😋😋😋.

Jikin Junmai Daiginjo Hakutsuru Nishiki Hiiri 2021BY✨ It's been a super long time since we've had an IE JIKON 🏠😊😊😊😊. And this dazzling blue Hakutsuru Nishiki is one of the most popular Jikon bottles 🙌 I've tasted it many times at CSW and outside drinking and it's still very delicious 😋! It's already been aged for more than 2 years 💤, but it's fire-aged, The aroma is very fresh, with a hint of pear, white peach, white sugar, and sweet aroma, and the first sip is intoxicating with its elegant soft sweetness and acidity, while the second half is dominated by a punchy spiciness. It has given me energy for tomorrow. ☺️

Good evening, I haven't been able to post for a few days due to work, so I'm going to be a bit nervous and open this bottle 💁. Imi Gin-Sen Unrefined Unrefined Unrefined Nama-Shu 2023BY✨. I can't remember where I got the 2023/R5BY, but thankfully I was able to get it and put it to sleep 💤. The aroma is tropical, almost pineapple-like 🏝️, with a hint of mint that seems to be derived from the sugar and alcohol. The attack has a volume of sweetness that is typical of Imi, but is immediately followed by the dry, bitter taste of Aruzoe, making it easy to drink and delicious 😋😋😋😋.

Tonight, I was sorting through my stocker and cellar and found this rare find lying around😅. Collage dot SAKE project vol.5✨ It's a collaboration with Marie Chiba, a sommelier and restaurant owner 🍶. The aroma is slightly apple-like. The taste is surprisingly beautiful despite its low whiteness 🤩. The aroma is soft rice sweetness and sharp acidity of Yume no Koka, It has a distinctive bitter aftertaste 😊. It was easy to drink and very delicious 😋😋😋😋😋😋.

Tonight, we opened this bottle to raise the spirits as it will be a three-day weekend following last week. HANAHODAKU Junmai Ginjo Nama Nigori Sake 2022BY✨. This is another bottle that I've let sit for quite a while 😅. Well, first of all, I fell in love with this stylish stained glass jacket 🥺, and although I could have bought it, I neglected it for less than 2 years due to a serious wasting disease 🤣. Now, I'm going to take it from the top. The aroma is like a pinapple, but I like the fact that it's so clear and mature 😊. The attack has a distinct juicy pineapple sweetness, but from the middle onward it is mainly dry, spicy, and bitter. Miyamanishiki? I thought it had the flavor characteristics of the former. When mixed with the lees, the overall flavor deepens and becomes even more delicious. It tastes even better 😋😋😋😋😋😋. It's been a long time since I've had a Huayou, but it was very good. ☺️

Tonight, I wanted to drink Sentori, so I chose this one 💁. Sentori Organic Natur 00:Dobrok 2024✨ This is the Dobrok version of ON, but I let it sit for a long time, but I don't mind drinking it. I opened the bottle quietly and started with the top clearings. When poured into a cup, there is a petit gas, tropical flavors of banana and a bit of melon 🏝️ from a clear banana soda 🥤 to a crisp dry finish 👍. When you make it dobrok, it's even more delicious and unstoppable 😋😋 with more makgeolli-like and yogurt lactic acidity 😋😋. We were happy with our delicious drinks tonight😊.

Ryoseki RxW SPECIAL EDITION 2023BY✨ It's a collaboration with the same brewery as Hanayuup 🍶 The rice is Akita Sake Komachi. The sake rice is Akita Sake Komachi. It is a draft sake, but it has been left unused for a year and a half... 😓 Never mind, let's drink it. The aroma is sweet with a hint of white sugar, and the taste is soft, sweet, and delicious, just like Ryozeki. It is a home-aged sake made in the autumn season, so the richness and roundness are enhanced, and it is a delicious sweet sake to drink on occasion. Also, for the first time in years, I bought a bottle of Hanayu Aizan on impulse and I'm looking forward to it too ☺️

Yamazan Junmai Ginjo Yamae-Nishiki Hitogochiki 50-50 2023BY✨ This is an unfiltered, unfiltered, unadulterated, unblended sake of Yamae Nishiki and Hitogokochi from Yamazan, whose popularity is on the rise. ☺️ The aroma is a mature apple 🍎 The taste is juicy, sweet and acidic, with a rich brown sugar flavor with a little bit of maturity. The finish is quite dry and bitter, which is typical of sake 😋😋😋😋 It suits this season, which is becoming a bit like autumn, but personally I would have liked a little more acidity 😊.
